I have been following Hawkers Omakase by Maybank & Makansutra 2026 with excitement and anticipation - the selected stalls are carefully curated and showcase the best of Singapore hawkers.
The next installment is with Doris's Devilishly Delicious Curry by Justin (launching on 17 Aug and on till 31 Oct).
Justin's popular Doris's Devilishly Delicious Curry stall was located at Amoy Street Food Centre. Justin serves his grandma Doris's recipes, hence the stall is named in her honour.
Justin will operate from Greenhouse Dusit Thani Laguna for Hawkers Omakase by Maybank & Makansutra 2026 till October.
Greenhouse is one of the most beautiful restaurants in Singapore. The ambiance instantly reminded me of the amazing Miracle of Natural Rayong in Thailand.

Kristang or Portuguese Eurasian cuisine is a unique culinary heritage born of Portuguese rule of Malacca in the 16th - 17th century. It's a delicious fusion of Portuguese with Indian and Malay traditions.
Justin started us off with Eurasian Grago Cutlet or fried krill shrimp cake / fritter or cucur udang.
One dish, we call it by so many names and know exactly what we mean. I am so proud that multiculturalism is in our blood. To me, it is a very precious thing.
Justin fries the fritters on order, so they are always fresh, well browned crisp outside, piping hot, and soft juicy inside.
Almost all krill, held together with a bit of flour batter and flavoured with fresh aromatics. Umami savoury sweet fragrant.
Served with sambal made with at least two types of fresh chili pepper for that perky burn.
Feng Crostini.
Ground pork offal stewed with a complex spice mix of coriander, cumin, cloves and many more.
Nevermind what is inside, just know that curry feng is so good with bread! Full of flavours and aromas, and crunch from the baguette.
Eurasian style crostini. So shiok. Can't stop.
Then, Kari Debal, of course.
More famously known as Devil's Curry, it's made with spices and aromatics with vinegar and fired up with chili pepper (seeds included). It's known to burn tongues and stomachs, Justin has toned down the spiciness so most people can dabble with this devil.
Debal is the Kristang word for "leftover", kari debal was a Boxing Day treat to make the most of Christmas leftovers. Later, the well loved frugal dish became a delicacy in its own right.
Justin's grandma Doris used smoked pork belly, elevating the Eurasian icon with umami savoury smokey flavours. There's an underlying taste of smoked meat in Justin's Devil's Curry.
If Justin's kari debal is not devilishly hot enough for you, not shiok enough, take this red pill.
Prawn Bostador.
I like this curry as it was the richest with the most coconut milk and spices. The tiger prawns were huge, and the head especially, was oozing with umami.
Bostador means "to slap" in Portuguese, alluding to its spicy kick. The spice was relatively mild in Justin's rendition but I did get a umami jolt from the prawn head butter.
Fish Pimenta.
Heavy on spice especially pepper though just mildly spicy hot.
I love the aubergine or eggplant smothered in the curry. I dug up every piece and ate them all 😅
I was scooping up the curry sauce and enjoying it neat. Rich complex blend of flavours and aromas. Micro crunches to the bite as Justin made the spice mix from scratch, chopping, dicing the aromatic roots to tiny bits to release their flavours.
Kristang cuisine is rarely found outside of Eurasian homes. This collaboration by Maybank & Makansutra, Doris's Devilishly Delicious Curry and Greenhouse Dusit Thani Laguna is a great opportunity to enjoy this unique heritage cuisine, lovingly prepared with pride, faithful to family tradition, served in a beautiful restaurant in a garden, at good value.
