Ah Seng Teochew Braised Duck Rice @ Serangoon Garden · One of the Best in Singapore


When buddy brought this plate of braised duck from Ah Seng, my first reaction was "woah sliced so thin" ๐Ÿ‘ It got me salivating straightaway.

Most braised duck stalls in Singapore slice or chop their ducks thick. Some even chopped them looking like sticks of French fries ๐Ÿ™„

I prefer my braised duck sliced and thin like this.

Ah Seng Braised Duck is one of Singapore's most famous and really needs no further introduction.

Founded in the 1960s by Ng Kim Seng at the Lim Tua Tow Market, the well loved braised duck stall is now in the second generation, run by his son Ng Teck Siah and daughter Wendy Ng.

The slices of duck breast were soft-tender, moist, and savoury with discernible duck taste. I like this ๐Ÿ‘ especially the sliver of fatty skin attached.

Ah Seng serves pig head parts too (to me, the mark of a good traditional Teochew braise stall ๐Ÿ˜† ). Buddy got pig tongue. It's soft-tender, spongy, moist, savoury from the braising stock and subtly porcine sweet.

Pig's ear nicely done. The strip of cartilage soft crunchy, wrapped in soft-tender gelatinous skin.

Teochew style soy sauce based braising stock pooled at the bottom of the plate was watery, not starched up, savoury with underlying sweetness, not flat. They use good quality soy sauce. I was able to "drink" spoonfuls of it to ascertain its flavours.

Everything was nice including the soup and chili.

The soup was cloudy, savoury and slightly peppery. There's likely pig stomach in it. I drank it all up ๐Ÿ˜‹

The chili was spicy, tangy and layered with mild heat from crushed garlic.
I shall be back so I can try more items such as pig skin, etc from Ah Seng. We didn't order too much today because we were trying a few stalls including this hidden gem porridge (which you must try if you are a porridge lover).

  1. Number one in SG, today I go..but close till 18.....try their pig stomach soup,number 1 in SG and number 1 cheap with big portions $3 only.......

  2. Ya Ah Seng duck was one of the best since in 1965 at Lim Tua Tow Market Upper Serangoon Road founder by the late Ng Kim Seng. Now his son Ng Teck Siah continue Ah Seng Duck legacy the duck red meat had strong flavour tender,moist and fatty. If you like can try his sister Wendy Ng stall at blk 204 Serangoon Centre now operate by her previous staff.

  4. There are 02 Ah Sengs and both are related:
    Wendy Ng’s brother runs the stall in Serangoon Garden, while Wendy & her husband runs the stall in Blk 104, Serangoon Central in Nex - they have the widest range of braised items, sans coagulated duck & pig blood!
    There’s Hup Seng in Sin Ming Blk 22 that offers similar food items - unsure whether they are relatives.
