We were in Sibu, the last stop of our 8-day Pan Borneo Highway Kuching to Sibu self drive holiday.
A stop at the Sibu Night Market is, of course, a must.
You can't miss it even if you wanted to 🤣
Sibu Night Market is located at surrounding streets and a carpark near Sibu Central Market, closed off to traffic at night.
Operating since the 1960s, there are about 100 food stalls and stalls selling daily necessities like clothing, toys, etc.
At RM1 a piece, this apam balik stall at the Sibu Night Market makes one of the best crispy, light, peanut filled apam balik I have ever tasted. Business is brisk and sometimes have to wait (but worth it).
Here, they call apam balik 半个月亮 or half moon. Learned something new everyday when we travel.
For this article, I want to focus on the BBQ pork stalls and let you explore and find out about the rest yourself 🤭
There are four or five BBQ pork stalls here, all very busy with their own following.
They have head to tail 🐖 and everything in between 😋
There's face, ear, Sibu donut (snout), tongue, collar (neck), belly, intestine, ribs, lean cuts, char siew, trotter, knuckle, it's pork lover's paradise.
There's also sausages and soy sauce braised items.
We had pork belly, ear, and collar. They will warm up your picks before chopping. Everything here for RM30. We wanted more but only had tummy space for these as there were many other food we needed to try 🤣
Our picks were chopped up and bagged.
Took it to a nearby coffee shop (there are a few ringing the Night Market).
Just buy some drinks and the kopitiam owners have no issue at all with eating outside food in their shop.
Great balance of tender meat, juicy fat and crunchy cartilage. Seasoning flavours were mild so we can enjoy the natural porcine sweetness. Love it.
Pork jowl / collar / neck is my favourite cut of pork as I like the balance of meat and fat, and the unique slight spongy bounce to the bite. Nice porcine sweetness too.
The pork belly rind was crispy, meat tender and fat juicy. Just the right intensity of savoury seasoning and spice for me (not overly salty 👍 ).
I am already missing the BBQ pork of Sibu 🥹
