Sik Bao Sin Desmond Creation • Cantonese Cuisine📍592 Geylang 吃飽先 ☎ 67443757

Came to Sik Bao Sin Desmond Creation 吃飽先 at 592 Geylang Road for our Saturday lunch.

Sik Bao Sin doesn't take reservations so it is first come first served.

As expected, it was very busy but we managed to snag a table for four at noon time.

The menu - everything on one page.

Only thirteen dishes - seven mains, two soups and four vegetables.

We started straight away with SBS's famous 蒸鱼头 Steam Fish Head. Came doused in a savoury aromatic blend of soy sauce, bean paste and oil, and topped with chopped scallion, chili pepper and fried pork lard croutons.

It's the upper portion of a song fish cut laterally in half.

The meat was thick, soft tender, sweet and the characteristic earthy taste of song fish was hardly discernible.

The umami savoury and lardy taste of the blend of sauces and oil complemented the sweet fish well.

Well browned, light, lard saturated crouton, fresh, clean tasting, savoury toasty pops.

姜妙鸡 Ginger Chicken.

Chunks of chicken marinated in fermented red rice wine, deep fried then sautéed with ginger and ginger sauce.

Somewhat firm and dry meat but well flavoured with savoury sweet ginger sauce and rice wine.

Chunks of ginger, crunchy, moist, sweet with subtle ginger taste and heat. Love it.

咸鱼蒸猪肉 Steamed Pork with Salted Fish.

Ordered this for no reason other than it was a homely dish that I grew up with.

Lean and fat pork, chopped, seasoned with soy sauce and sesame oil, topped with a piece of salted and cooked by steaming.

Umami from the salted fish, savoury flavours from the sauce complemented the porcine sweetness.

A taste profile and mouth feel that never fail to comfort and satisfy.

油芥兰 Garlic Kailan.

The obligatory greens. Nicely executed kai lai stir fried in sauce and oil with garlic cloves. Crunchy, juicy, with the natural taste of the leafy vegetable overlaid with savoury sauce and subtle garlic heat.

Watercress Soup 西洋菜汤.

A Cantonese meal without soup feels incomplete. So had the familiar watercress and pork soup.

It was nice like a reliable, trusted old friend who never disappoints.

Seeing other tables having the 豆腐虾 Tofu Prawn, felt a bit of envy and remorse 🥹 Good lah, more reason to return sooner 🤭

Not sure why I didn't order this. Maybe the menu photo didn't do the dish justice 🤭

We enjoyed our lunch at Sik Bao Sin. The flavours were layered and at the intensity I like. I was able to enjoy the dishes without rice as they were not overly salty. (I remember that at the old Sik Wai Sin, the dishes were robustly salty and needed to be enjoyed with rice or noodles i.e. the old Cantonese way.)

People say a good restaurant don't need a menu with hundreds of dishes. Just a few excellent dishes which people, regulars and new converts keep coming back for. That's how it is at Sik Bao Sin Desmond Creation.
