Over a decade ago when I ate this pork and shark aspic at Lao Liang, there was already this nagging feeling that we may not be having this for very much longer. Ten plus years on, fortunately Lao Liang 老两 stall is still here at Berseh food centre - the same taste, and the same feeling that this may not last much longer.

✍1 Jul 2025. Singapore hawker centres are refreshed every few years, closed for a few months for renovations. Pioneer hawkers take the opportunity to take an overseas break, sometimes it's an opportune time to call it a day. A significant portion of Singapore hawkers are past 60 years old (some waiting to retire).

Once in a while, I do indulge in a bowl of turtle soup with yam rice. I like the mouth feel of turtle gelatin which only turtle has.

My go to place for turtle soup in Singapore is Berseh Food Centre since the 1990s. Another of my favourites is in Geylang. (Please share with me where else can I get good turtle soup in Singapore. Thanks!)
