Khun Pook took us to the Trang City Municipality Market and led us through a maze of little market stalls to a pak mor stall.


It's a one woman operation market stall known as ร้าน "เจ๊กี่" ขนมปากหม้อ​ or Jae Kee Pak Mor Khanom Shop. 

Pak mor is somewhat similar to "soon kueh" we find in Singapore / Malaysia - stewed cabbage and crunchy bean sprout dumpling wrapped in thin rice skin. But, with several differences. 

Pok mor is made by spreading milled rice solution on a stretched cloth over a pot of boiling water, similar to making chee cheong fun (Cantonese steamed rice roll). 

A small clutch of stewed cabbage and raw bean sprout is then added, and made into a dumpling by folding the tissue thin rice sheet over. 

The pak mor is then garnished with raw cucumber slices and served splashed with a watery red colour sauce. Look at that pot of sauce... it's almost like a pot of soup. 

This watery, sloshy sauce is the soul of the dish, in my humble opinion.

It was so delicious. The dumpling was a mix of soft and soft-crunchy textures and layers of sweetness. The watery sauce was zesty sweet spicy sour savoury like a watery version of sweet chee cheong sauce (but I prefer pak mor sauce for the added zest and more complex layers of flavours). The cucumber slices were soft crunchy and refreshingly sweet. 

All of us love it. 

If you like some protein with your pak mor, there's stewed / braised pig head and innards. 

The braised pig head and innards were served with the same zesty sour sweet spicy savoury sauce which, to me, takes braised pork to a higher level of enjoyment. The zesty sauce cutting through the fat made the fatty pork head felt refreshing. There's also steamed kang kong in the plate for added crunch and vitamins. 

Together, the pak mor and stewed pork is a most nourishing, hearty meal with carb, vitamins and protein which is affordable and oh...  so delicious. 

Come to Thailand must look out for pak mor khanom for a delicious hyperlocal experience.
