ok... I am slowly blogging about my favourite comfort foods from before my blogging days. One of them is Han Jiang Fish Soup 韩江鱼汤 at AMK 409 Teck Ghee Square in Ang Mo Kio, Singapore.

One of my favourite lunch dishes is Teochew style fish soup. It's delicious and it makes me feel good that I am eating healthy 😄

AMK 409 Teck Ghee Square is one of our usual lunch time haunts. The queue at Han Jiang Fish Soup is always long and it clears quite slowly. Waiting 30 minutes is normal. I used to drive my colleagues crazy by insisting on queueing for it 😜 So, they make me buy for everybody while they "lim kopi" (drink coffee) and waited for me.

The stall is run by the twin 張 brothers who had worked in half a dozen fish soup stalls before striking out on their own. Their recipe is the result of years of experience working at many different fish stalls.

Here is the SGD10 serving of Han Jiang Fish Soup with Batang fish (or Spanish Mackerel). Han Jian Fish Soup also serve Ikan Merah (Red Snapper fish) but I prefer Batang.

The soup is clear with some suspended cloudy particulate. Though light bodied, the soup has quite a complex blend of savoury, sweet and hints of tang or sourness from fresh tomatoes, bitter gourd, parsley, tofu cubes, lettuce, dried seaweed, bits of toasted tee po (dried sole fish), Ikan bilis, soy beans and a dash of pepper.

I prefer my fish soup clearer with cleaner tasting flavours like at Fatty Weng. What wins me over to Han Jian Fish Soup is the fresh Batang fish.

I like it that Han Jiang Fish Soup's Batang fish slices are always tip top in freshness. The ivory white flesh with skin on, is tender yet have a light bouncy firm bite.

I also like it that Han Jiang Fish Soup provides many thick slices of fresh fish meat per serving.

The thin bitter gourd slices are sweet and have a soft juicy crunch. (No worries, there is not the slightest hint of bitterness in this bitter gourd.)

Jiggly soft and smooth tofu cubes. We can taste the flavour and smell the aroma of soy beans here.

The fish soup is traditionally eaten with fermented soy bean and cut chili with light soy sauce. I didn't use these much as I like to taste just the natural flavours of fresh Batang fish.

AMK 409 Teck Ghee Square is one of several old hawker centres dotted around Ang Mo Kio town. It has buzz especially during lunch but is never over crowded. Clean, well kept and airy, it's actually quite comfortable and we like it here.
