Woohoo!! Found a good nasi ambang dulang style in Johor Bahru at the golf terrace at Ponderosa Golf and Country Club (near Taman Molek).
The nasi ambang dulang set at Ponderosa GCC is priced at RM15++ per person and it is available only by arrangement with Sue or Faridah at hp: +6019 7588 037.
The man behind Nasi Ambang Ponderosa is Chef Zamani. Chef Zamani hails from the Royal Town of Kuala Kangsar in Perak state (Malaysia). Zamani has been cooking since he was nine years old following instructions from his mum as she was unwell and had to let Zamani take over the cooking tasks in the family from a tender age.
During his career, Zamani has worked in many places in Malaysia and also for 2 years in Brunei as a member of the Sultan of Brunei's kitchen. Zamani is full of passion and enthusiasm for his craft especially for traditional Malay food.
The large mound of simple steamed white rice is crowned with Ayam Salai Masak Hijau. Half a bird is marinated with traditional Malay spices, smoked with coconut husk and then deep fried. The fried chicken is then blanketed with a heavy coat of spices, mainly ground green chili (hence the green colour). The fried chicken was crispy outside, and inside, it was done slightly pink, thus retaining the natural juices and flavours. The chicken was smoked with burning coconut husk before frying, infusing it with a unique smokey flavour. The rempah marinate and smoked/fried chicken combine wonderfully with the green chili and creamy spicy paste - inducing us to rip the bird apart with gusto.
Ikan Goreng Berlada - pan fried browned King Mackerel steaks in spicy chili.
Kambing Rendang - The tender lamb chop is deeply infused with aromatic and flavoursome spices and coconut milk. There was a slight gamey taste of mutton (which I like) beneath the flavour of spices.
Sambal Goreng Jawa. Mung bean noodles, tempe, fried tofu cubes and crunchy local vegetables lightly stir fried with mild spices. A familiar homely dish in Malaysia, Singapore, and Indonesia.
Udang Sambal. Shelled fresh prawns with tail on, stir fried in savoury spicy sambal chili.
Ubi Kentang Sira Cili - Potato wedges with spices and chili flakes.
Mee Goreng Kampung. Fried yellow noodles kampung style.
Sambal Hitam Ikan Bilis dan Kacang. Anchovies and peanut fried with blended dark soy sauce with a bit of sugar and spice.
Ikan Masin Bulu Ayam. Simple crispy fried salted fish.
Achar Timun dengan Nenas. Fresh cucumber, pineapple, onion and chili pickled simply with salt, sugar and squeezed lime (no vinegar). It's refreshing and crunchy with all natural flavours.
Labu dengan Nenas Lemak Ikan Masin. This accompanying side dish is not part of the nasi ambeng set. It's a family recipe from Zamani's grandmother which his dad ate before leaving home at the break of dawn for a day tapping rubber. It's an appetising dish which goes well with lots of carbo (rice). Sweet soft pumpkin and pineapple are boiled in coconut milk with salted fish (Ikan Kurau) and mild spices. The dish served in a bowl of folded banana leaf is garnished with cut red chili.
