Restoran Local Best Roast Pork Sio Bak Char Siew Desa Jaya Johor Bahru JK1446
We were food spotting around Taman Desa Jaya (near Jusco Tebrau) when we were stopped in our tracks by this huge eye catching slab of golden siew yok (roast pork belly or sio bak) at Local Best coffee shop 本地好美食天地.
位于新山 Desa Jaya, Jalan Danau 1 的"本地好烧腊"烧肉脆皮, 肉嫩, 油香. 叉烧也好吃. 值得一试.
The little corner stall run by Ah Ngan from Bentong (Pahang state) serves all kinds of Cantonese style roasts, from chicken to duck to char siew and siew yok. Our eyes and heart were set on the sexy siew yok.
We ordered this RM5 siew yok and egg noodles to taste.
At first, we weren't overly excited that the siew yok was cut into fingers (strips) rather than large meaty chunks. The all important crispy skin also lacked the dark brown, burnt toast char. The roast's skin was thin like mandarin orange peel and just faintly gold in colour.
But, looks deceive. That little golden cap at the tip of the finger crackled like brittle glazed biscuits when it shattered between our teeth.
The fatty layer bursted juices like a slice of gently savoury orange. The lean meat was tender and just managed to hold the brittle skin and watery fat together.
There is lots of fat in this siew yok, perhaps too much for some of us. As for me, this crispy juicy flavour packed sio bak is worth dying a little for.
Though we were served a generous heap of egg noodles, it was generic, slightly overdone and tossed in flat tasting watery sauce. So, next time we shall stick to plain white rice.
Though the noodles didn't thrill us, we were so excited by the siew yok that we quickly followed up with an additional order of siew yok and char siew for RM10.
To me, the char siew looked like candy with a slight glint outside.
The gently savoury sweet char siew was a blend of tender lean meat and soft juicy fat. The caramelised outside was sweet savoury and felt gummy tacky. We love this char siew too.
We asked stall holder Ah Ngan why are his char siew and siew yok so good? Ah Ngan said the keys are fresh premium pork, strong charcoal fire and their secret marination. Ah Ngan roasts his meats at the stall at 4:00am everyday and starts selling at 7:00am.
Ah Ngan roasts only three slabs of siew yok a day. "More than that, it's difficult to manage the quality" he said.
Ah Ngan sells his excellent siew yok at RM63 per kilo.

The sio bak is indeed fresh and nice, but it's the slightly smoky flavor of the char siew that I love. My new fave char siew stall :-)
