The moment I heard about cheese bak kut teh at Ah Peng Bak Kut Teh in Setia Indah, I just had to try it. As a dry bak kut teh and cheese lover, my intuition tells me that this savoury on savoury pairing will work.
Ah Peng Bak Kut Teh opened in May 2018 (less than 6 months ago). It's a typical simple shop lot eatery found all over Malaysia.
Owner Ah Peng worked at his uncle's Tian Hua bak kut teh shop for 15 years. Now, Ah Peng has own BKT shop with signature cheese BKT 芝士拉丝肉骨茶 and wellness herbal BKT 养生肉骨茶.
Like me, Ah Peng loves dry bak kut teh and cheese, and so he decided to put them together.
The cheese bak kut teh come sizzling as a dry bak kut teh topped with molten cheese. I like the visual contrast of dark brown pork ribs with thick milky white soft blanket of melted cheese.
The pork ribs were cooked by boiling in herbal stock, then stir fried with savoury dark sauce before topping it with mozzarella cheese.
Toss the pork ribs, dark sauce and molten mozzarella cheese together in the clay pot. The stringy mozzarella wrapping the pork ribs like a gummy ball of rubbery yarn.
The pork rib meat was neither very tender nor very juicy (but not dry).
The dominant flavour was savoury salty from the dark sauce and the mozzarella cheese. If you like savoury salty taste, this cheese bak kut teh is for you. It goes very well with sweet boiled white rice.
It's nice though I thought I might like it more if there were some sweetness and a bit of spicy heat in the taste profile.
I also tried the wellness herbal bak kut teh. The soup was made with a blend of over 20 types of herbs.
The pork ribs were tender and sweetish. The soup was herbal sweet garlicky, a bit too herbal for me. If you like herbal soups, this bak kut teh is good for you.
👉 Personally, I don't see cheese BKT as merely a gimmick but as a dish that can become mainstream with a few tweaks. Ah Peng welcomes your feedback, so that he can perfect the dish.
