This neighbourhood wanton mee stall has one of the most addictive noodles and sauce in the WTM business in Singapore.

Wang Jiao Shu Shi is a buzzing corner at Hainanese Village Centre where for decades (since 1983), regulars gather for their wanton mee breakfast. Still, Wang Jiao Shu Shi remains a hidden gem, relatively unknown outside of Hougang.

When I placed my order, auntie took it down on a piece of paper and told me to find a seat nearby. She will bring the food to me and collect money when my food is delivered.

She also gives out pagers to other customers. I am not sure how she decides who to get what service (but appreciate the table service 😊 ).

My $3 set. Noodles topped with char siew slices, a bowl of wantons in soup and a small dish of pickled green chili.

The slender noodles don't come with much sauce. I had to work hard to toss and fold the noodles to get as much of them coated as possible but there didn't seemed enough 😂 The noodles clumping together didn't help. They gave a lot of noodles for $3.

The noodles were excellent - they were al dente but not in the stiff Italian way. The angel hair thin noodles were tender-soft but have a gentle crunch to the bite that resonates in the ear.

There was barely enough sauce for the noodles but where they went, they gave the strands a savoury sweet lardy flavour and aroma with a subtle bit of chili heat.

These noodles are old school excellent in the nostalgic way.

The charcoal roasted all lean char siew slices were quite thick, a little dry and stiff-chewy to the bite, almost like jerky. It tastes gently sweet with a bit of underlying savouriness.

The round bodied soup had quite pronounced old school anchovy taste which I like. The thumb size wantons were smooth with a small knob of fatty and lean minced pork inside. There were also bits of soft-crunchy water chestnut. It was seasoned with soy sauce and aromatic sesame seed oil in the traditional way.

Overall, this old school wanton mee doesn't blow many minds but it's their egg noodle and sauce that I can't get enough of (and not because there was too little).

They also have a chicken curry version which I must try next time.
