Singapore is blessed in many ways. One of the many ways is chicken rice. Even our Malaysian friends who debate with us on so many things, generally agree that Singapore chicken rice is better 💪 😝 🤭

Chicken rice stalls and restaurants are everywhere in Singapore and the standard is high. The average Singapore chicken rice stall is at least good.

It is not easy to find a bad chicken rice stall in Singapore. You are really lucky, if you can find one 🤭

Singaporeans may complain a lot but not about their chicken rice 🤭 Then, the challenge for chicken rice bosses is how to stand out in this crowded, saturated field.

The Singapore Michelin Guide has four chicken rice stall in their Bib Gourmand list - Tian Tian, Sin Kee Famous, Tiong Bahru Boneless and Ji De Lai (this stall) in Chong Pang.

Chong Pang hawker centre is like home base to me. We have been eating here since the 1990s. Chong Pang is far off the tourist belt, so the food stalls here rely on neighbourhood folks for business.

I haven't tried Ji De Lai Hainanese Chicken Rice before and am trying it for the first time today.

Got myself the S$5.80 set meal. There's chicken, greens, soup, rice and sauces.

The default for the chicken set was the breast. Alternatives were wing, and lower quarter back. I was given the latter as I also didn't want wing 🤭

I did asked for drumstick (S$7 for the set) but was declined sold out.

The meat of the cold dunked, large broiler bird was soft tender, skin was soft smooth, with a bit of jelly fat underneath. The serving was juicy, came dressed in a watery savoury sweet sauce and had a subtle chicky sweetness (I like my chicken to have this chicky taste). Nice, typically nice, ordinarily nice in the "pampered" Singapore chicken rice way.

The blanched green was fresh, crunchy, juicy, and dressed in savoury sweet sauce. Garnished with tasteless woody chippy factory fried shallot.

The savoury cabbage soup complemented the chicken and rice well.

Average quality grains, some broken. Nice nutty tender texture and just right moistness. The savoury flavour was subtle and grease was light. The garlic, lemongrass & pandan aromas were also very mild.

The ground ginger was done a bit fine, but the taste and gentle bite of ginger were there.

The chili sauce was quite good, slight salty taste with a quite sharp sting.

If you are in Chong Pang and it is chicken rice day for you, can try out Ji De Lai.
