A new food stall at Chinatown Complex food centre, serving Hong Kong style beef noodles.
In the red zone, stall #02-100. The menu is just below the signboard.
Owner Mdm Faye 菲 hails from Zhuhai City in Guangdong, China. Her family has been Singapore for over a decade and has been running a traditional cakes business.
She opened HE SHENG Hong Kong Flavour Expert Beef 和勝港式牛肉汤 two months ago.
We started with #6 大四喜 which was assorted beef comprising tendon, brisket, tripe and beef ball with noodles in a Chinese spice and herb soup.
I've not been to Hong Kong for decades and have not had beef noodle there before (so I don't know now how He Sheng compares with those back in HK).
He Sheng's rendition had taste of cinnamon and star anise with some vegetable sweetness and beefiness from meat. It's a different profile from Singapore local beef noodle brands like Hock Lam, Hwa Heng and Hai Nan Xing Zhou.
I like He Sheng's watery but flavoursome soup. (Shall try their "dry" version next time.)
The crunchy sweet tangy preserved vegetable, blanched spinach, and chopped scallion added their textures and flavours to the dish.
For Chinese style beef noodle, my preferred carb is thick rice vermicelli (chor bee hoon in Hokkien / Teochew).
I am glad He Sheng used the soft tender rice sweet kind rather than the "plasticky" springy chewy kind with lots of non-rice starch. But, He Sheng cut their rice noodle into short strands (personally, I prefer long slurpy noodles).
Soft tender with a squeaky chewy bite. Beefy sweet savoury taste. There's a bit of soft beefy visceral fat in the brisket. Nice.
The beef brisket or ribs were sautéed and seared to lock in the juices and flavours. And, during the simmering process, the seared outside prevents excessive leakage of flavours into the soup, thus keeping the briskets tasty.
The tendons were done soft, almost like a floppy rope of jelly. A very mild savoury sweet taste infused from the soup.
Spongy soft chewy tripe.
Stewed radish is central to a bowl of Cantonese beef noodle in my humble opinion. It gave the soup its sweet flavour and infused the blend of savoury, beefy, sweet goodness deep into its fibres. Each wedge of stewed radish was like a juicy flavour sponge.
Ate the beef noodle soup with this house made chili relish. It's a complex blend of layered spicy hot, savoury and sweet. It makes everything tastes nicer and I found myself enjoying it on its own as well.
#5 Grilled Beef Ribs (boneless).
Beef rib sautéed in tallow till browned and slightly charred outside.
These were so delicious. The meat was soft tender with visceral fat. Beefy sweet with a slight toasty taste - the kind that triggers my mind's beer switch 🍺
Wow this was tricky.
A bite of this crunchy, juicy, tangy, savoury, sweet pickled radish triggers the mind to crave a beefy savoury toasty bite, which then sparks off the thirst for a swig of beer or sip of wine. Then, a merry spiral of radish, beef, spirit, repeat.
#7 Beef Golden Coin Soup.
Same soup, same radish and beef balls, and the beef shin slices were amazing.
Relatively thick, well "marbled" slices, done soft tender. Beefy sweet with infused spice, herb, vegetables sweet, savoury flavours infused from stewing in the soul. Faye simmered the gristle till they become jelly.
#3 Beef Brisket with Tomato Soup.
The serving looked a bit different from the signboard. It used to be beef with tomato sauce but now the serving is with soup. Mdm Faye has tweaked the recipe.
The beefy, spice, herb, sweet, savoury soup now has tomato umami and tangy sweetness.

The thin lean beef slices were tender chewy, their main purpose was to give up their beefy flavour to the soup.
If you are a beef lover, here's a new beef place you can try out. I like everything we tried today, especially the beef shin, and grilled boneless beef ribs. Buy some beer / wine and have a great chill out time at Chinatown Complex hawker centre.
