Authentic Hock Lam Street Popular Beef Kway Teow at North Canal Road is so conveniently located near Raffles MRT station, I wonder why it took me so long before I come here 😂

Owner Edwin Tan is the fourth generation of Hock Lam beef noodles. Youthful Edwin already has 20 years of cooking beef noodles under his belt as he started at age 18 at his father, Francis Tan's famous shop at Purvis Street.

The menu is simple with everything on one page. It's just soup or no soup (dry) noodles with various beef parts. Since I am too lazy to pick and choose can eat anything, I went for the Supreme Mix with everything.

Today, I had the dry version on Edwin's suggestion.

It's a mound of noodles (I chose kway teow) and crunchy bean sprouts buried under a gooey brown sauce. The sauce is made by thickening beef bone stock with starch. The sauce tasted mildly savoury beefy sweet herbal, in that order.

On top were blanched beef slices, stewed beef brisket, beef balls, tripe, and tendon. There's also crushed toasted peanut, chopped preserved vegetable, and chopped cilantro (coriander).

Wooh.... every tender piece / cut of beef was tender and had their own texture and type of beefy flavour.

The chopped preserved vegetable added a bit of salty accent to the mild sauce while the crushed peanuts gave it a bit of subtle sweetish nuttiness.

The tendons were done very soft (jelly limp, actually) and infused with a bit of the beefy stock flavour.

I normally don't care much for dips but these two really work well with Hock Lam beef noodles. The chili dip is savoury spicy hot with a bit of zingy tanginess. The most interesting one is the cincalok or fermented shrimps. Its smooth salty umami flavour made every mouthful of noodles and beef taste better.

I also normally don't care for distracting side dishes but this popcorn chicken is really good. Nicely crisp gently savoury outside and inside it was tenderly juicy sweet. Non greasy. Love it. I didn't try the Thai inspired sauce that comes with the fried chicken.
