Four of us met for lunch at Summer Pavilion restaurant in Ritz Carlton Singapore. The exquisite flavours and impeccable service at the well appointed restaurant lived up to its One Michelin Star reputation. Summer Pavilion clinched the coveted award in the 2016, 2017 and 2018 Singapore Michelin guides.
The Tony Chi designed decor was contemporary, furnishings were comfortable yet elegant. The ambiance was classy but neither overly ostentatious nor opulent (in other words, tasteful). Finesse was in the details like the exquisite vases, Italian tableware etc.
I like this table with a view of Ritz Carlton Singapore's signature crystal glass facade. The atmosphere in Summer Pavilion was polite, almost hush, rather unlike typical Chinese restaurants which can get noisy. Chope this "romantic couple" table for your date.
There were different set ups to suit all kinds of group sizes. From large traditional family gatherings to little office clique parties.

Chinese Executive Chef Cheung Siu Kong started his career in Hong Kong in the 1980s. He joined the renowned Lei Garden 利苑酒家 in the 1990s. Came to Ritz-Carlton Millenia in 2003, leading Summer Pavilion to numerous accolades including Michelin stars in 2016, 2017 and 2018.
Summer Pavilion clinched the Gold award at the Best Asian Restaurants Awards organised by The Straits Times and Lianhe Zaobao 联合早报 in 2018. Chef Cheung Siu Kong also won the inaugural “Chef of the Year” award.
Summer Pavilion's cuisine is classic Cantonese with contemporary touches and Chef Cheung's creative flare.
Deep fried bean curd skin roll with prawn, chicken, water chestnut, mushroom, carrot, and bamboo shoot in oyster sauce. I like the mouth feel of the crispy wrap's residual crispness enveloped in gooey savoury sauce. Chewed past the crisp wrap and a complex bundle of savoury sweet flavours burst in my mouth. C'est tres delicieux (paiseh, fine dining must write atas a bit).
Truffle set on fried vegetable with whipped egg white. The unique robust savoury, subtle earthly taste of truffle made the humble fried basil leaf shine.
Tender juicy, savoury sweet Iberico pork char siew.
Poached dong xing grouper fillet with wild mushroom, Chinese cabbage in fish stock.
Oh... this fish stock was wonderfully delicious. Thick and smooth like savoury milk with subtle underlying fresh fish sweetness.
Tender juicy smooth sweet slices of fresh 东星斑 dong xing grouper.
Braised sliced Australian Greenlip abalone, boletus mushroom, asparagus.
Nice savoury flavour in the spongy tender chewy abalone. Most memorable was the sauce which was oyster sauce infused with abalone flavour giving it a lovely layered savoury taste.
Marinated smoked London duck.
Tender moist duck meat with thick fat under the skin which was crisped on the outside. Layers of robust savouriness with additional layer of flavour from smoking the duck with Chinese tea leaves. (Actually, most of the pieces weren't fatty. It's just that l zeroed in on the fatty pieces.)
Poached rice and Canadian lobster.
Everything was nice and this was my favourite of the day (followed by the grouper fish soup). The lobster soup had nice clean tasting crustacean savouriness. The rice grains had a slight crisp outside, a bit of risotto type stiffness and tenderness. The lobster meat was tender and crunchy with natural fresh lobster sweetness.
Dessert time!
Sweetened almond tea with nostoc algae, chilled osmanthus jelly, and osmanthus crunch bar.
Thick smooth tasty sweet almond tea with bits of spongy tender nostoc algae for added texture.
I like this bite size modern interpretation of the ancient Manchurian crispy chewy sweet savoury sachima snack.
We had Chinese tea to go with our meal. Our tea cups were constantly topped up politely along with smiles without needing to ask. Great service. (You can opt for wine pairing, if you prefer vino.)
Recommended for you 👍 Contemporary interpretations of familiar Cantonese classics beautifully presented with full exquisite flavours along with delightful twists. I enjoyed great food with awesome ambiance and impeccable service.
Friend's treat so I don't know the price. I understand it is premium but good value for money.
