The Ramadan buffet is held in the grand golf terrace facing the golfing greens.
Chef Zamani Kidam's team has prepared a "Sajian Klasik Nusantara" or Classic Archipelago Cuisine themed buffet featuring local warung or street side stall style food, together with popular must haves like charcoal grilled whole lamb.
The al fresco golf terrace (no air con) was beautifully laid out for the preview of the Ramadan buffet dinner. As usual, we got here early and made our rounds around the stations before everyone got really busy with guests.
Spotted Chef Zam in his working clothes cooking sup tulang or "stewed gearbox" (before he changed into batiks to mingle with guests).
They grilled beef, chicken, fish, etc on the spot at BBQ corner.
A whole roast lamb or kambing golek waiting for us ๐
The freshly made nasi lemak was served in traditional street side style, wrapped in triangular bundles lined with fresh banana leaf.
The ever popular fried chicken was cooked in small batches so they were always fresh, piping hot and crispy. Every new batch of fried chicken disappeared in seconds upon landing on the serving tray.
I've seen roti canai being made countless times since childhood, but it still fascinates me.
True to the "Sajian Klasik Nusantara" warung theme, there were even street burgers and roti John.
The fried carrot cake and fried kway teow were tasty.
Ais kacang drew children and adults like bees to honey.
Fresh cut fruits are always good with meals ๐
Done my photo round, I settled back at the table.
Waiting for the guests were nasi ayam penyet, nasi kerabu, daging gulai kawah batang pisang, sambal sotong bunga, ayam masak Nusantara, nasi lemak, nasi ambang, keropok lekor, goreng pisang, roti John, kebabs, capati, tosei, puri, roti Canai, fried carrot cake, fried kuay teow, kerabu, rojak, ulam raja, pucuk pegaga, petai, and many more. The menu will be rotated every week, so return clients will experience new dishes every time.
We can't wait to start our feasting ๐

My round 1. Why so little ah?
No lah...., I was reserving my stomach for Chef Zam's special beef, chicken, duck and catfish smoked with coconut husks. Woohoo.... the natural flavours of the tender juicy meats were infused with the characteristic smokey flavour and aroma of coconut husks. The sauce which was gently sweet spicy also had subtle smokey taste.
Yummaey.
Of course, I didn't stop there ๐
Popular street food "stewed gearbox" are lamb knee bones slow stewed in low heat for hours in spices and lots of vegetables. The soup was a bit greasy but the tender meat was deliciously sweet, savoury with mild spicy heat. Gearbox connoisseurs will patiently dig out the soft jelly sweet gamey bone marrow from inside the hollow.
I like Ponderosa's roast lamb as the meat was tender, juicy, sweet, savoury with subtle natural lamb flavour.
Shared a packet of nasi lemak with buddy Florence. With so much goodies to try, it is always smart to share the calories but still get the full flavours.
This nasi lemak was good ๐ The rice was aromatic and tasted of fresh coconut milk. The fried ikan kuning was nicely done with a slight crisp and was not overly dry. The sambal chili was excellent. Sweet spicy with quite zesty heat yet not overly sweet. The sambal chili had nice dried anchovy flavour.
The sambal chili was so good, I ate it with raw petai (stinky beans) - two of my favourite things together, yummaey.
(Harish said he has to move to another table because of the stinky beans ๐ Actually, I only copied Florence's idea ๐ )
Information for you ๐ Affordably priced Ramadan buffet that is no slouch in flavours and spread. There is plenty of tasty dishes for every taste.
