Lao Huang Hakka Niang Tou Fu. Yong Tau Foo Stuffed with Porky Goodness @ North Bridge Road Food Centre

Stumbled upon Lao Huang Hakka Niang Tou Fu stall at North Bridge Road hawker centre and was excited to see that they use pork fillings for their yong tau foo. They also have Hakka style noodles, so yeah, this will be my brekky this morning 😄

There's a constant 2 to 5 person queue this 9am on a Wednesday.

A quick peek revealed yong tau foo pieces stuffed with minced pork. Pork stuffing is not common in Singapore these days as the norm is bland, flat tasting, generic surimi stuffing (which I never liked).

As this was the first stop of my food hunt, I just got Hakka noodles and four pieces of yong tau foo to taste. They have a lot more varieties, I just picked four.

Everything on my tray for $4.60.

The mound of Hakka noodles and bean sprouts were topped with sautéed minced pork and the four yong tau foo pieces were partially buried below.

Hakka noodles are thin and flat like narrower mee pok. The sauce was mainly lard. When tossed, the noodles were enveloped in grease with bits of sautéed pork scattered here and there between the tangle of noodles.

The crunchy noodles tasted lardy and felt greasy on the lips. It was nice but I would like it better if there was also a bit of savoury sauce to give it more depth of flavour (like at Tow Kee in Seremban). A bit more sauce would also make the noodles feel less dry.

The yong tau foo pieces were generously stuffed with minced pork and then deep fried. This was the egg plant (brinjal). The minced pork had a tender, slightly squeaky chew and a bit of crunch here and there (from cartilage?). Flavour was savoury but lacked depth perhaps because there was no salted fish.

The fried chili yong tau foo looks a bit shrivelled but was delicious 😋

The non fried yong tau foo items were served in a large bowl of soup. This was the lady finger stuffed with minced pork.

I like Lao Huang's savoury sweet soup as it has that soy bean taste.

I like Lao Huang's old school sweet sauce. It has a thick grainy body like a paste and the old school savoury sweet taste of fermented soy bean. Not many yong tau foo stalls serve this type of sweet sauce.

If you miss old school Hakka yong tau foo, get it at Lao Huang Hakka Niang Tou Fu. (They also have yong tau foo with fish paste stuffing because some customers prefer it.)

Whenever I think of yong tau foo, I think of Ampang 👈 click
