But, during this pandemic, this may not be possible for everyone due to social distancing regulations. At the moment, many MONTI fans cannot dine here like they used to e.g. family groups due to the max two pax per table regulation.
For these customers, MONTI executive chef Felix Chong specially created MONTI A CASA, which means MONTI at home. The idea is to serve the flavours of MONTI at the customers' own homes. (With chef Felix is MONTI manager Federico Burci from Tuscany, Italy.)
Chef Felix burnished his impeccable Italian culinary credentials with years at fine dining Italian restaurants around the world including at Zu a Ma in Liguria, Italy under the tutelage of Master Chef Giacomo Gallina.
At the helm at MONTI since 2016, chef Felix led MONTI to win “Restaurant of the Year” crown at the World Gourmet Summit 2021.
Under chef Felix, MONTI secured Ospitalita Italiana certification by Italian Chamber of Commerce as well as clinched 2 Temples rating from Accademia Italiana Della Cucina 2021. Fiorentine Burger.
This to me is the best gourmet burger $25 can buy in Singapore.
Its double wagyu beef patties are thick, tender, juicy, rich with beefy
sweetness plus a bit of smokiness from the sear outside.
Complex blend of flavours in the towering stack with mozzarella cheese,
cheddar cheese, pecorino cheese, parma ham, pickles, caramelised onion,
black garlic, fresh tomatoes, lettuce, and balsamic glaze all between
sweet oat studded buns.
Chef Felix feels the humble potato is one of the most underrated of food ingredients. Chef Felix enjoys playing, I mean innovating, with potatoes so even the fries are done to an uncommon level of finesse.
Crisp, chewy crust overlaid with tomato sauce, mozzarella cheese, dressed with fresh wild rocket, cherry tomato and centrepiece burratina cheese (specialty from Apulia, southern Italy).
Made from the milk of buffaloes native to Apulia (seaside province facing the Adriatic Sea in the Mediterranean), the unaged cheese is rich, creamy, soft, stringy, gently savoury with a
milky, buttery flavour.

Burger looks delicious however wonder what are chefs' objective of creating such. Are the different layers meant to be eaten with a single mouthful so that you get to enjoy the complex flavors from all the delicious ingredients? If otherwise eating it layer(s) by layer(s) seem to somewhat defeat the purpose of what the chef is trying to create (assuming it is for gastronomic intention and not visual).
