Buddy Marcus enthused about a relatively new Hong Kong soya sauce chicken and wanton noodle stall at Golden Mile Food Centre.
Hong Kong Soya Sauce Chicken is located at a quiet back corner, basement level stall in Golden Mile Food Centre.
Fans of Xin Le Wang 新乐王 at Balestier Road will remember chef Rocky from Hong Kong. A few months back, he closed his restaurant due to greatly increased rental and opened this hawker centre stall.
From his wide repertoire of Cantonese culinary icons, chef Rocky narrowed it down to soya sauce chicken and wanton noodle at his hawker centre stall.
Rocky doesn't serve greased rice 油饭 with his soya sauce chicken.
We had half a soya sauce bird for $16. It came splashed with a savoury sweet thicken brown sauce and generously topped with scallion oil.
The chicken was soft tender, moist and smooth. It tasted savoury sweet from poaching in soya sauce and from the brown sauce dressing.
The scallion oil added aromatic spring onion flavour and smell.
We love it.
The wanton mee set.
I added on two dollops of house made chili sauce. And the scallion oil I pinjam ("borrowed" in Malay but I actually pinched lah 🤭 ) from the soya sauce chicken topping 🤭
The egg noodles were slender and had the light springy crunch which I like. There was no lye water taste (often found in Hong Kong style wanton mee).
The tender springy noodles were coated with a savoury sauce with spicy heat from the chili sauce and additional aroma and flavour from the scallion oil. Overall, I enjoyed this noodle though it has less umami and lard taste than the Singaporean favourites such as Koung's but that's another genre of wanton mee with char siew.
Side: If you have not already heard it, the original Koung's in Geylang will close permanently at the end of Dec 2023 😔
Rocky's wantons were relatively large.

There's tobiko or flying fish roe which added a bit of brininess to the subtle savoury sweetness of the fresh pork and prawns. The tobiko also added a little poppy crunch to the wanton's soft tenderness which is quite delightful 🙂
The soup was quite flat tasting and didn't have the anchovy or ti poh taste I like.
This is another good choice in one of Singapore's best hawker centres crowded with popular stalls (and new good ones keep popping up here). Fans of Xin Le Wang can find chef Rocky here.

I ate on 2 Jun 2024. Good. For $4.50 cannot complain. This stall has high quality noodles.
