For the past weeks when I was exploring Bedok Interchange Hawker Centre, I noticed that there was always a long queue at Pin Xiang Chicken Rice 品香雞飯. I only tried it today (finally), as Pin Xiang is famous for their fried chicken but I am a poached chicken devotee. I must say, thanks to Pin Xiang, I am a fried chicken convert now.

Pin Xiang serves fried chicken, poached chicken, and lemon chicken (cutlet). Looking at what's in the window, it was obvious that Pin Xiang is mainly about fried chicken. (By the way, deep fried chicken is conventionally referred to as "roasted chicken" in Singapore hawker stalls.)

I just had this $3.50 set for tasting (as I wanted to try more stalls at the hawker centre).

The skin had a slight crisp and quite robust layered savouriness. The meat was tender and juicy with slight natural chicky sweetness. The chicken was dressed with watery, mildly savoury sweet soy sauce blend that did not overwhelm the chicken's natural taste. There were sweetish salty bits of preserved vegetable at the side which were quite nice.

Pin Xiang's rice is excellent. The good quality grains were tender and nutty, and well enveloped with savoury chicken flavour. There was also a subtle savoury sweet aroma of chicken stock. The flavoursome rice was also not overly greasy.

The chili sauce was sharply spicy with sourish zing. The ginger had milder heat and was balanced with salt and savoury chicken grease. Nice but nowadays I like to eat my chicken without sauce or dips.

Simple savoury sweet soup with the flavours coming from chicken bones/ neck/ feet, corn and preserved vegetables.

Pin Xiang has four outlets in Chong Pang (Yishun), Frontier Building (Ubi Ave), Changi Airport T4, and this at Bedok is the parent stall founded in 2014. Founder Mdm Tan sold fried fritters at the old Bedok Centre hawker centre and chap chai png (economic rice) before she found success with fried chicken.

We went back for half a bird for two of us. Total bill was $12 with two rice (which is very competitive). The rice was good as usual. The chicken was slightly drier, coarse and flatter savoury/ salty in flavour with less natural sweetness (compared to our previous tasting). The watery savoury sweet sauce at the bottom of the plate helped to moisten and added more layers of flavour to the chicken.
