When I passed by this stall at Bedok Interchange Hawker Centre, the thing that hit me first was the bold sign "Handmade Fishball Meat Ball Noodle 手工鱼圆肉圆面". Only on closer look did I see Yong Hwa Delights 永华, the actual name of the stall.

We got fishball, meat ball and noodles.

I zeroed in on the fishball, meat ball which were served in a bowl of clear soup dressed with a spoonful of aromatic oil.

The clear soup was salty savoury in an unclear 浊 yet flat tasting way.

The fishball was light and felt light to the bite. It had a spring and bounce but it was the breaking apart type of spring and bounce, not the pushing back, resisting type of spring.

Flavour wise it was quite flat salty savoury with little, if any fish taste.




The meat ball was also not dense as it was a blend of fish paste and minced meat. Slightly firmer than the fish ball but not by much. Mainly salty savoury spiked with bits of chive and savoury/ salty bits which made it 
浊 to my taste buds.

The best thing about Yong Hwa Delights for me was in the bowl of noodles. The generic yellow noodles were topped with lean pork slices, minced pork, liver, fishball, meat ball, stewed mushroom, spring onion, lettuce, coriander, a dash of white pepper powder and dressed with blended sauce.

The humble generic yellow noodles dressed in Yong Hwa's sauce were delicious. It was a nice blend of quite robust savoury, spicy, sweet and lardy that wowed me.

I had always felt that where every stall uses generic noodles (in Singapore), the proprietary blended sauce is the critical element that sets the best stalls apart from the rest. Yong Hwa Delights is one of those stalls but is relatively under the social media radar.

I want to highlight the fresh liver slices as they were done perfectly - spongy with a soft grainy pastey feel - 粉粉 as we say in Chinese.
