This has happened before. I was enjoying my lunch at a hawker centre (this time at Marsiling Mall) and buddy popped up offering something else to share (this time chee cheong fun). I took a piece, partly out of curiosity, partly out of appreciation. Boomz, I liked this chee cheong fun so much that we ordered another set.
The chee cheong fun (rice rolls) come splashed with lots of savoury sweet watery sauce, topped with chopped spring onion, fried shallot, and a dollop of sambal chili at the side.
The rice sheet was thin, soft, and smooth. The rice sheet has a subtle natural sweetness which was complemented by the watery savoury sweet sauce.
The stall serves freshly made chee cheong fun with nearly ten different types of fillings - we had otak otak and shrimp. The fillings added textures and their own flavours to the rice rolls which were nice. But, truth be told, my favourite way of eating chee cheong fun is kosong. I like this mildly spicy sambal chili as it had lots of dried shrimps and onions which gave the hot chili pepper a good balance of savoury sweetness.
Kevin hand makes the chee cheong fun one by one on order. He started selling chee cheong fun back in the 1980s, first at Marina South Hawker Centre. I used to go there at the windy big open field on weekends with the kids to fly kites before the place was redeveloped.
The rice roll is made with a blend of rice and other flours. The blend is scooped into a shallow steaming tray lined with a piece of cotton cloth. The rice "water" cooked by steaming forms a soft thin film clinging to cotton cloth.
Kevin carefully separates the rice film from the cotton cloth. Fillings like prawns, otak otak, mushroom, pork floss, char siew, century egg, scallop, egg etc can be folded into the rice film, making a roll. You can see from the translucence how thin and supple Kevin's chee cheong fun is.
Kevin learnt his craft from his father in law. His sister in law runs the popular freshly hand made chee cheong fun stall at Old Airport Road Hawker Centre (I shall try that next time).
