The spirit of culinary innovation is well and alive in Johor - Lei cha spaghetti at Eh He cafe carries on this Johor tradition of East West fusion.
Hakka lei cha spaghetti was one of the dishes Eh He cafe in Johor Bahru created in conjunction with Chingay in JB to celebrate the Chinese New Year in 2016. There is a dish to represent each of the five Chinese clans in JB. I've eaten Eh He's Hakka lei cha spaghetti a few times before and enjoyed it very much.
Hakka lei cha spaghetti is the brain child of Eh He's head chef Paul. Paul is Hakka and has decades of experience as a Western chef. Hakka lei cha and Italian spaghetti may seem an unlikely pair but to Paul, it is a natural match.
Lei cha is a traditional Hakka staple rice dish. Traditional lei cha's signature is it's green coloured brothy gruel made by hand grinding and boiling leafy vegetables and herbs. The vegetable and herb gruel is eaten with rice along with fried tofu, diced preserved daikon, toasted peanuts etc. Lei cha is often served as a healthful vegetarian dish without meat. Eh He's lei cha spaghetti is a vegetarian dish.
Chef Paul used lei cha's signature brothy gruel to stir fry boiled spaghetti till it enveloped the pasta and is infused into each strand. The spaghetti is stir fried with three types of fresh mushrooms and served with crushed toasted peanut topping. Each serving costs RM13.90+
When the plate of Hakka lei cha spaghetti arrives at the table, we can smell the characteristic aroma of the green vegetable broth. We can also taste the refreshing vegetable sweetness on the pasta which was done soft al dente. The spongy stir fried mushrooms add savouriness to the dish while the crushed toasted peanuts added nutty taste and texture to it.
I love lei cha and spaghetti, so this clever fusion dish is just right for me.
While at Eh He, I always treat myself to their "white coffee" which is pure Liberica coffee beans without bulk fillers like corn. It's an acquired taste but I prefer white coffee's characteristic aroma and flavour over the more bitter "black" coffee which have corn and margarine added in before roasting.
