Almost everyone who has been to Taiwan will fall in love with the night markets here. It is so full of life and youthful energy. There are hundreds of stalls, many owned and run by enthusiastic young hawkers. Night markets are where many successful F & B entrepreneurs in Taiwan cut their teeth.

Every Taiwanese city have their own night markets and in Taichung, one of the most popular ones is Fengjia Night Market 逢甲国际观光夜市.

Thousands of visitors throng the night markets and many are young people. It is a favourite pastime of young and old in Taiwan to roam the cool night markets for food, clothing, trinkets, gadgets and accessories - all the important things any in-trend young person needs 😄

Traditional food stalls are still going strong in Taiwan with young people serving heritage food and young customers enjoying them. This stall serves braised pork innards.

At the same time in the same night market, young people are starting businesses serving food which they created themselves. The young hawkers' enthusiasm and zest for life is infectious and inspiring even for an ok boomer unker like me.

Meet 靜 and 晴. They started a little stall known as 溪小蝦創始店, literally the "Little River Shrimp First Shop". From the name "First Shop" they chose, you know the confident young ladies have big dreams for their humble pioneer stall 😄

They created eight flavours of the small river shrimp known locally as 小白 or "little white shrimp". 小白蝦 is known for their soft shell and tender sweet flesh. (In Malaysia, it is the favourite choice for making prawn crackers).

The little white shrimps are lightly battered. 晴 fries them to a golden brown crisp.

The fried white shrimps are further prepared in eight different ways according to customers' choice. 靜 is torching the cheese to give it a slight char on top.

This is the mayo and cheese flavour. Actually, it's a made to order flavour on customer's request, combining two of their 8 flavours. Yes! Flexibility and adaptability are the keys to success!

We ordered the spicy flavour which 靜 made by tossing the fried little shrimps in chili powder.

We actually had two orders of these - normal spicy and extra spicy 😄

I'll suggest normal spicy as we are still able to taste the little white shrimp's natural sweetness 😋

This flavour has mayo and bonito fish flakes. I like this relatively mild flavour which complemented the little shrimps natural sweetness without overpowering it.



The little birth of a big dream.



👉 When you are in Taiwan, of course, you must visit their night markets. If you are in Taichung, look out for 溪小蝦創始店 stall in 逢甲国际观光夜市. I am sure you will love the little treats 靜 and 晴 have for you 😄
