We got together at Chinatown Complex hawker centre for YJ's favourite HK soya sauce chicken at stall #02-85 (green zone). Chinatown is Singapore's soya sauce chicken central as it has the highest concentration of the Cantonese dish on our island, including the One Michelin Star hawker Chan's Liao Fan stall.

Hawker Randy who hails from Hong Kong has over 40 years of experience under his belt, having started working in his early teens. He came to Singapore in 1996 after 20 years as a hawker in Hong Kong.

Twenty years in Singapore, hawker Randy has built a loyal following for his HK soya sauce chicken and poached chicken (plus other braised dishes like lam yue braised pork trotters 南乳焖猪脚 which I want to try next time).

I like it that hawker Randy's HK soya sauce chicken is poached to less than 100% doneness. The plump bird is tender, juicy and smooth (especially the skin). The savoury braising sauce with mild herbal notes is slightly less intense than hawker Chan's, thus allowing us to taste the subtle natural taste of fresh chicken.

We also had half a poached kampung chicken 菜园鸡.

The poached kampung chicken was cooked to 100% well doneness. Tender and juicy, though not as tender as the soya sauce version. (This is expected as Randy's HK soya sauce chicken is made with standard battery raised fat American broilers.) The kampung chicken is bathed with a mild savoury sauce and the chicken flesh flavour is mildly sweet.

I love hawker Randy's chili dip - it's just chili and ginger held together with lime juice and a bit of salt. No gimmicks. Nice!

👉 There are perhaps a dozen Hong Kong soya sauce chicken stalls in Chinatown Complex. All are well established stalls, all have their loyal die hard following. The difference between the stalls is rather subtle, more or less savoury, more or less aromatic, fully done or medium rare, costs a bit more or less etc. Hawker Randy's Fragrant Sauce Chicken is one of the stalwarts of Chinatown worth a try - you may love it too.

Hawker Chan's HK soya sauce chicken before he was awarded the Michelin Star 👈 click (I haven't eaten at hawker Chan's since he was awarded the Michelin Star. There are so many worthy alternatives to try 😄 )
