First an apology. I cannot remember who alerted me that a family of Penang's legendary Red Hat Auntie char kway teow is running a CKT stall in Plaza Sentosa in JB. My dear friend, you know who you are - my thanks to you and sorry I can't recall who told me this 😂

Mr. Loh is the nephew of the Red Hat Auntie of Lorong Selamat (his mum is RHA's sister). He was a shipyard worker in Singapore for decades before setting up this char kway teow stall in JB under his aunt's tutelage, five years ago.

Mr. Loh said that his char kway teow uses the same recipe and ingredients as Red Hat Auntie's CKT except for the kway teow noodles which are from a JB supplier. As his stall is indoors, Mr. Loh uses a gas stove instead of charcoal (which Red Hat Auntie uses). 

Disclosure: I have never tasted the famous Red Hat Auntie's Penang char kway teow before 😂

The first thing I always check for in char kway teow is wok hei. Mr. Loh's kway teow noodles is stir fried with a blend of lard and vegetable oil giving it a slight caramelised surface. Yes, wok hei was present - giving the kway teow noodles a bit of toasty flavour and subtle crisp. The noodles were also neither overly greasy nor wet.

Mr. Loh uses a savoury blended sauce which gave the rice noodles interesting layers of savouriness. I can taste the characteristic flavours of Penang CKT in Mr. Loh's fried kway teow.

Waxed sausage, prawn, blood cockle, bean sprout, chive, egg, and sauteed garlic added flavours and textures to the fried rice noodles, completing the humble popular dish.
