Grand Seafood at Stellar Walk is Johor Bahru's newest seafood restaurant. It was just opened for four days when we dropped by today.
Grand Seafood has a large, bright banquet hall of 55 large round tables. They also have several private rooms.
Executive chef Foong hails from Ipoh. In the 1990s, he came to Johor Bahru to work at Grand Straits Garden Seafood when it was a kampung style zhi char restaurant at the shores of Danga Bay (before it was redeveloped). He then moved to Gim Tim (a Hokkien) restaurant in Singapore where he worked for 20 years before coming back to Grand Seafood. Chef Foong's cuisine is a blend of Cantonese and Hokkien styles with contemporary touches. The idea of Grand Seafood is slightly elevated food at reasonable prices.
I like it that the prices of live seafood are clearly displayed.
Deep Fried Fish Skin with Salted Egg Yolk (price RM15+). Light, crispy, crackly with layered savoury flavours. Nice appetiser while waiting for the main courses.
Baby Sotong (squid) with Honey Sauce (price RM24+). Fried to a crackly crisp and well enveloped with a mild sweet savoury spicy sauce. This appetiser is like a nibbly beer snack.
Braised Fish Maw with Rich Chicken Stock (price RM8 per 1 pax serving). Nice smooth rich body chicken soup with spongy fried fish maw, two types of mushrooms, tofu, cabbage, carrot etc. Comforting familiar taste at an attractive price.
Steamed Soon Hock (marble goby) with Black Garlic (seasonal price - today RM138+ @ RM23 per 100 grams).
Nicely steamed meaty sweetish fish slathered with gently savoury sweet minced garlic and savoury sweet soy sauce blend. The usual subtle earthiness of soon hock was fleeting and almost indiscernible. I like this steamed soon hock.
Wok Fried Three Pepper Crab (seasonal price - today at RM112 @ RM16 x 700 grams).

Meaty crab with briny sweet flesh. We tried Grand Seafood's signature 3 pepper sauce - it's mildly savoury spicy in layers of flavours.
First time trying 3 pepper style. Next time, I shall go for their other preparations which include chili, kam heong, black pepper, salted egg yolk, glutinous rice steam (interesting), chicken flavour oil (interesting).
Chef's Special Traditional Noodles (price RM15+). Must order this traditional Hokkien dish rarely found found in restaurants.
The thick spongy strips made with tapioca flour were well enveloped with a caramelised savoury sweet sauce flavours like a good char kway teow. The tapioca kueh were very springy like those candy gummy (very unlike chai tow kueh).
Fresh Tropical Fruits and jelly served on ice (price RM10+).

The exterior of the banquet hall at the ground floor of Stellar Walk mall. The al fresco dining area opens in the evening. At night, we can see the lights of Sembawang and Woodlands across the Johor Straits. Most of the mall is still untenanted.
