⭐⭐⭐ Le Palais 頤宮 which specialises in premium Cantonese cuisine is the only ⭐⭐⭐ Michelin Star restaurant in the Taipei Michelin Guide 2018, 2019 and 2020.

Signature dishes by chefs 陳偉強 and 陳泰榮 at Le Palais include Peking duck, stewed abalone, char siew, dim sum etc - familiar dishes done to exceptional standards. The Peking duck is served in 3 courses - crispy golden brown skin with a layer of fat beneath, thick tender juicy meat slices and a rich duck bone soup with yam. Other usual traditional suspects of Cantonese / Hong Kong restaurants such as pork collar char siew, sweet and sour pork ribs, grouper steamed Cantonese style, carrot cake, char siew bun, chee cheong fun, Yang Chow fried rice, Malay sponge cake etc that delight diners with unexpected exquisite flavours. ⭐⭐ 請客樓 The Guest House is a Sichuan restaurant. The Guest House serves familiar Sichuan as well as Taiwanese dishes with innovative twists (but without deconstructing them). Chef 林菊偉's signature dishes include spicy mapo tofu with fish roe, steamed julienned tofu (finely cut tofu like noodles dressed with aromatic chicken oil and blended sauce), sesame oil chicken rice, noodle soup with pomfret fish, pork intestine and tripe soup, oil bathed spicy cherry duck leg, fried pig tail, century egg with chili pepper etc. They are also well known for their traditional small plates like stewed pork ears. The Guest House's prices are competitive i.e. at about the same level as less acclaimed similar class restaurants.

⭐⭐ Taïrroir 態芮 chef 何順凱 serves familiar Taiwanese cuisine boldly deconstructed and re-interpreted with French influences. Dishes to try are Taïrroir's rendition of kung pao chicken, chicken rice, pineapple tart, etc. Be prepared to be visually and gastronomically intrigued and delighted. The dishes are a huge departure from the familiar yet they evoke our emotions and memories of the original dish deep in our minds' recesses.

⭐⭐ RAW by Andre Chiang is classified as a modern French restaurant but it is hard to put it squarely in any box. RAW seemed like it's Andre Chiang's work in progress, his search for a definitive Taiwanese cuisine identity and culture. So, RAW food has Taiwanese foundations but overlaid with myriad global influences in addition to French.  Examples of ground breaking RAW dishes include tea quail eggs in tofu nest, porridge cracker with sea urchin, fermented tofu and sea snail soup, truffle tofu, "dirty chicken" with black radish etc. But, you won't see these when you go to RAW because the menu is constantly renewed. The only constant at RAW is the dishes are all new creations, so expect the unexpected, be prepared to break your own culinary boundaries. But, you will be delighted, that's for sure.

⭐⭐ Sushi Amamoto 鮨天本 is a small sushi restaurant that seats only 12. The Japanese chefs make Fukuoka style sushi and sashimi using only fish killed on the same day. Little marination or sauces are used, relying mainly on the natural flavours of the fresh seafood for taste. One year waiting list. Legend has it that Sushi Amamoto missed the 2018 Michelin Star honour because Michelin inspectors couldn't get seats in time for the 2018 guide.

⭐⭐ Shoun RyuGin 祥雲龍吟 is a fine Japanese restaurant that showcase premium local produce and seafood for its dishes. Owner-chef Hieda from Japan, personally sourced the ingredients from all over Taiwan island. Chef uses little seasoning to highlight the flavours of quality Taiwan produce. Signature dishes include grilled threadfin fish, grilled ayu fish, grilled beef, smoked pigeon, sashimi, house made custard apple sorbet etc all exquisitely prepared and beautifully presented in modern innovative Japanese style.

MUME serves modern European cuisine made with Taiwanese produce but it is more a studio than a restaurant. Hong Konger owner-chef Richie Lin and his team conceptualise and create all their dishes with influences from all over the world. Chef Richie focuses on experimentation and creation, so MUME's kitchen is unlike other restaurants. For the customer, their experiences at MUME will be unique as the same dishes cannot be found anywhere else or even at another time at MUME. ⭐ Impromptu by Paul Lee is a Taiwan, French, US fusion innovative cuisine restaurant. Impromptu's dishes are constantly renewed, so the menu will always feel fresh even for regulars. ⭐ L'Atelier de Joël Robuchon 侯布雄 modern French fine dining in a luxurious red and black theme setting run by one of legendary Joël Robuchon's proteges, chef Olivier Jean. Besides imported ingredients like Maine lobster and Iberico pork etc, Chef Olivier also uses local produce and seafood to create contemporary French dishes. Examples include poached red snapper with lemongrass and butter, foie gras with grilled free range chicken from Taichung, etc.

Danny's Steakhouse 教父牛排. Helmed by head chef Wu Hsiao Fang 吳曉芳, Danny's signatures are USDA prime ribeye top cap steak, Maine lobster with red curry foam and beurre blanc (butter sauce), grilled sous vide octopus, etc. Danny's meats are grilled with a wood and charcoal fired oven.

 Da San Yuan (3 Coins) 大三元 is an old school Cantonese restaurant. Over half a century old, its initial crew came from Hong Kong's 大三元 restaurant. Signatures are traditional authentic classics like Peking duck, braised sea cucumber with goose web, stir fry large crispy prawns, pan fried threadfin fish, Cantonese style steamed fish etc. Three Coins is also known for their dim sum. Run by lady boss 邱靜惠 now, Three Coins is transiting to its third generation and is developing dishes to appeal to the new generation. Examples of 3 Coins fusion dishes include abalone topped with diced tomato, seafood baked in cheese served in a papaya, tea oil chicken mee sua, etc.

大腕燒肉 Da-wan is an informal, open kitchen yakiniku or Japanese style BBQ shop. Owned and run by a passionate young crew headed by owner-chef Dahon Huang. They handpick premium beef and pork from suppliers, extract the superior cut, lightly season, char grill and present it to the customer at the bar counter (conscious that a person's stomach space is precious and only the very best deserve to go inside). Signature cuts are Australian wagyu ox tongue, chuck flap, oyster blade, shin, plate etc. Get also their special grilled chicken liver.

Mountain & Sea House 山海樓 is a fine dining restaurant specialising in Taiwanese cuisine owned by 何奕佳. Chef 蘇瑞郎 uses Taiwanese produce and even local aboriginal spices to make authentic local dishes of 1930s vintage. They are famous for their signature combination platter which consists of sugar cane smoked chicken, house made Kurobuta pork sausage, braised abalone with aboriginal spices, tri-colour egg in squid, liver and trotter meat roll, and pig heart ginseng soup. Other popular dishes include crispy roast chicken, signature fried bee hoon (rice vermicelli), etc.

Golden Formosa 金蓬萊遵古台菜 is a 70 year old institution in its third generation now with owner-chef Eric Chen at the helm. Golden Formosa specialises in Taiwan dishes. Must order dishes include signature double deep fried crispy spare ribs, mullet roe fried rice, Formosa sliced poached free range chicken, Formosa sweet and sour fish 五柳枝鱼, peppery hog maw and chicken soup, squid and river snail garlic pot, Buddha jump over wall etc. The old school dishes are hearty, filling and on the greasy side. For example, the pork maw and chicken soup is a whole chicken with pig tail stuffed in its cavity. The whole chicken is then stuffed inside a pork maw. The whole "bag" is then boiled with herbs and pepper to make the soup. A dish rarely seen nowadays.

Ming Fu 明福台菜海產 is an old school, informal, small, family oriented restaurant specialising in traditional Taiwanese dishes. Typical shop lot, down to earth restaurant with only 6 utilitarian round tables. Founder 阿明师's dishes are hearty, full flavoured, filling and some are on the greasy side. Signature dishes are tender and juicy poached chicken, luxurious Buddha jump over the wall soup (with pork maw, abalone, pork trotter, mushroom, etc), sesame oil pork kidney, abalone lo mai gai (chicken stuffed with glutinous rice), sautéed oysters etc.

⭐ Ya Ge 雅閣 is a fine Cantonese / Hong Kong cuisine restaurant in Taipei's Mandarin Oriental Hotel. Chef Tse Man from HK is a big fan of Taiwanese produce. He uses local produce to cook familiar Cantonese dishes to exceptional standards. Signature dishes include Kurobuta pork honey char siew, siew yok, crispy fried chicken, baked crab (de-shelled), pan fried lobster meat, Ye Ge fried rice, chicken soup (served in tea pot), egg tart, polo bun, various dim sum e.g. abalone siew mai etc. All sounds very familiar but you will be delighted with the flavour, aroma, and overall quality. Decor and ambiance are exquisite, and service is impeccable too.

Tien Hsiang Lo 天香樓 is a fine dining restaurant specialising in authentic traditional Hang Zhou dishes. Chef 楊光宗 goes to the market every morning to handpick ingredients for the dishes. Famous dishes include Buddha jump over the wall which is an indulgent double boiled soup made with pork belly, chicken, abalone, dried fish maw, scallop, mushroom etc. Try also their signature duck and handmade fish ball soup, Long Jin tea fried prawn 龙井虾仁, dong po rou (stewed pork belly), beggar's chicken (a Hang Zhou icon) etc.

⭐ Tainan Tan Tsu Mien Seafood T.T.T.M. 台南担仔麵 serves traditional Tainan street food and exquisite seafood in ostentatious Victorian European style ambiance. Founder 許穆生 from Tainan came to Taipei 60 years ago and sold Tainan style noodle soup topped with sautéed minced pork and a prawn. It was not even a street side stall but a mobile shoulder slung hawker. The stall prospered on the strength of the Tainan noodle soup, moving into a shop and started serving premium hand picked seafood as well. The owner loves European collectibles so he decked his restaurant with his personal collection of ornate cutlery, silver, tea sets, columns, gilded framed mirrors, statues, pottery, crystal chandeliers, linen etc. Locals call T.T.T.M. Seafood, the Versailles of Huaxi Street. Come here to enjoy top quality seafood but never leave without tasting T.T.T.M.'s iconic street noodle.

Sushi Ryu 鮨隆 Media shy Taiwanese owner-chef 杨永隆 with 27 years sushi experience runs the 12 seater omakase sushi restaurant. No menu, Sushi Ryu uses mainly premium air flown ingredients from Japan, importing the season's best. So, the sushi served here changes with the seasons. Everything is daily fresh. Sushi Ryu is the only restaurant in Taiwan listed in Newsweek magazine's "101 Best Places in the World to Eat" chosen by 53 chefs in 2012.

Sushi Nomura 鮨野村 Japanese owner-chef has 26 years of experience, establishing Sushi Nomura 13 years ago. For authenticity, chef uses mostly premium ingredients air flown from Japan, down to the rice and even spring water.

La Cocotte by Fabien Vergé was awarded 1 Michelin Star in the inaugural Taipei Michelin guide in 2018. Owned by chef Fabien Vergé and his wife, pastry chef Kuan Naiyin 乃茵. La Cocotte served authentic traditional French cuisine using premium Taiwanese produce. Founded in 2009 in the Yong Kang area, La Cocotte was considered Taipei's best French restaurant by their fans. La Cocotte suddenly CLOSED (chef Naiyin said "suspend") within a month of receiving the Michelin Star. It was actually a decision they made before the Michelin Star award - Fabien posted a short farewell note in Jan 2018. Fabien and Naiyin decided to return to Abidjan, Cote d'Ivoire, Fabien's birthplace, where the couple now live.
