Braised Pork Leg Rice @ Huang You Liang Fook Seng Cafe Padungan Kuching 新福昇茶室 • 黄友良猪脚饭 ☏+6016 525 5323


Our Kuching local foodie buddy Joshua shared that Padungan in Kuching is well known for its Teochew braised pork rice shops.

I love pork leg rice but so far have only tried kha moo in Thailand.

There are at least five pork leg rice stalls along this one km stretch of street. (Of course, besides braised pork rice, Padungan has many other food stalls, coffee shops, cafes, bars, traditional food stalls, etc.) 


Joshua brought us to the Huang You Liang Pork Leg Rice stall at Fook Seng Cafe kopitiam at Padungan for breakfast. 

8am Cat City slowly awakes and customers quietly enjoying their breakfast routine.

Fook Seng Cafe is a typical Nanyang coffee shop. The shop owner typically runs the coffee / drinks stall, with a couple of tenanted food stalls. 

Kaya butter toast with soft boiled egg and coffee, a breakfast found throughout Southeast Asia from Indochina to across the Malay Archipelago. It's part of life in Nanyang from baby chair to wheelchair. 

Here at Fook Seng Cafe, there are Huang You Liang Pork Leg Rice and a kolok mee stall (what else? 🤭)

According to Joshua, Huang You Liang is a legend of pork leg rice in Kuching. Huang is 87 (2025) now and before retiring taught his recipe to several disciples. This stall at Fook Seng Cafe is one of the stalls that preserve Huang's legacy faithfully. 

There were lots of things from pork leg, trotter to intestine churning and stewing in the steamy brown braising stock. 

We left the ordering to Joshua (right), the local expert. 

They cut up the pork leg, meats and innards, and served them in a large plate dressed with fresh fragrant parsley. 

I like pork leg for its interesting mix of tender-firm chewy skin, soft juicy fat & collagen, soft-crunchy tendon and tender meat. HYL braised pork leg retained all the soft, tender, and firm textures of the leg. 

The braising stock was mild with savoury soy sauce and subtle taste of Chinese 5-spice. The mild braising stock allowed us to taste the natural sweetness of the pork. 

One of the signatures of Huang You Liang style pork leg rice is a bowl of vegetable curry. 

The curry was watery (not very lemak or coconut milky), not spicy hot but packed with spice flavours and vegetable sweetness. Its taste profile is like a top notch lontong curry with an added layer of pork sweetness.

Pork leg rice and pork curry work really well together, and you won't find such a combination anywhere, except in Kuching. 

The intestines were well cleaned and cooked right, so the soft spring to the bite and good natural sweetness were retained together with a gentle 5-spice and savoury soy sauce flavour overlay. 

Obligatory braised tofu and eggs. 

HYL pork leg rice is served with a watery, mildly spiced, savoury soup. 

I like sharp spicy hot chili sauce with galangal or blue ginger and belacan (fermented shrimp paste). 


If you are looking for traditional cuisine in Kuching, besides kolok mee, Sarawak laksa, etc, you can try out the Kuching way of eating braised pork leg rice. It's a staple here in the same league as kolok mee, etc. 

For future, I hope to work eat my way through most of the pork leg rice stalls of Kuching. Next stop is the trending, newest braised pork leg rice stall at Cat City Night Cafe in Padungan which works the night shift.

  2. Tony Boey as far as i can tell, the key difference is that it’s a slow cook without reaching a boil. broth is clearer and the meet is meltingly soft and of course the intestines are totally clean
