镬气 Wok Hei is an elusive thing in Singapore today. So when I heard about Wok Hei Hor Fun in Redhill food centre, I was eager to try it.

Hawker boss 吕得庆 hails from Kluang, Johor. He has 30 years of cooking experience rising to head chef of banquet restaurants before striking out on his own. First in 2017 serving white bee hoon in Ang Mo Kio, and then starting Wok Hei Hor Fun stall at Redhill in 2022.

Boss 吕得庆 saw the opportunity as wok hei is hard to find in Singapore. Not many mastered the art here.

Wok Hei Hor Fun now has several outlets and clinched the Michelin Bib Gourmand award in 2026. Boss 吕得庆 still operates from his Redhill stall, so if you want to try the wok hei master's cooking, you know where he is 😀

Wok Hei involves searing noodles or rice with sizzling hot oil in a wok over high heat to caramelise the starch / sugar in the rice or noodles. In jargon, it is called the Millard reaction / effect / caramelisation.

Good wok hei takes time, timing and patience as well as skill to control the heat - not enough means no wok hei, too much means chow tar or burnt.

To me, wok hei must have the toasty aroma and flavour in the browned wok fried noodles but neither burned nor anaemic like a ghost.

My SGD$6 beef hor fun with top up of SGD$4 beef slices. Lots of house fried lard croutons generously given on request. All soaking in a starchy gooey brown sauce.

The thin and broad hor fun (rice noodles) were lightly browned, and tended to clump together. 

Not overly oily, soft tender, and had a mild toasty wok hei aroma and taste.

Generous amounts of beef slices with the SGD$4 add on. I need the protein to stave off old age muscle loss 🤭

Tender (tenderised), but not much beefiness nor natural sweetness.

The house fried lard croutons were fresh, light, crunchy, and tasty without being grease saturated.

The gooey starch, soy sauce and egg concoction was relatively mild savoury sweet tasting.

Boss 吕得庆's white bee hoon is still on the menu. I like to try it next time.

A hefty dinner with lots of protein, carbs and some wok hei. Singaporeans are blessed with tasty, good value meals in a high cost city.

Another wok hei hor fun place which I like. It's in Ghim Moh food centre. I haven't been here for a while, so am not sure of the standard today.
