If you are in Singapore now, you will see many queues around the island - people lining up to buy bak kwa 肉干 for Chinese New Year. Eating bak kwa is a Chinese New Year custom in Singapore. Queueing for hours to buy bak kwa is also a CNY custom here 😄 Buddy brought me to Bee Chun Heng (Lau Po) 美珍香(老鋪) at 89, Frankel Avenue.

Bee Chun Heng Bak Kwa 美珍香肉干 is a 85 year old brand in the third generation now. It was founded by brothers Peter and Ah Wah's dad, and now Peter's son Sunny is running the shop.

Peter and Ah Wah's dad Teo Swee Geok 张瑞玉 was born in Anxi County 安溪縣, Fujian in 1917. The late Mr Teo started Bee Chun Heng Bak Kwa 美珍香肉干 in the 1930s in Singapore's Chinatown - switching from selling vegetables to grilling pork following the popularity of his bak kwa.

With his success, Mr Teo expanded his business, moving to 71 Rochor Road in the 1940s. Peter remembers vividly that monthly rental for the two storey shop house was $70.20 - a princely sum in those days. (Today, the location is paved over - becoming part of Nicoll Highway 😃 )

The late Teo Swee Geok developed the sauces and techniques that made Bee Chun Heng's charcoal grilled bak kwa inimitable. The sauces remained a closely guarded family secret which Bee Chun Heng (Lau Po) uses to this day.

In the 1970s, the Teo brothers moved Bee Chun Heng (Lau Po) 美珍香(老鋪) to Frankel Avenue where it remains till now.

Ah Wah takes care of customer service while nephew Sunny runs the booking and production at the back of the shop at Frankel Avenue.

Most customers buy as much as they could carry 😂 Little order slips were stuck all over around Ah Wah's counter.

Bee Chun Heng makes both the sliced pork and minced pork types of bak kwa. I had only the minced pork bak kwa as the sliced pork bak kwa were still in the grill. I could smell the toasty sweet aroma but didn't have time to wait till it was ready. 聞香而已 "got chance to smell only" 😂

I like Bee Chun Heng's minced pork bak kwa (price S$23 per 500 grams, 2018 prices). The texture is tender as it is a blend of lean meat and pork fat. It has a nice tender chew to the bite as the fat to lean meat ratio is just right. The right proportion of fat keeps the slice of grilled pork tender without excessive greasiness. The tender moist bak kwa was easy on the throat, even after too many slices 😄

The flavour consists of layers of moderate savouriness with an underlying sweetness. There is no char on the surface but when I chewed on the bak kwa, the toasty aroma slowly spread to my nose. Lovely. I like Bee Chun Heng bak kwa's addictive taste.
