We were chatting about where to get the best beef brisket and tendon noodles 牛腩面 in Singapore, and most friends around the table named Fatty Ox HK Kitchen at Chinatown Food Complex as their favourite. I've eaten Fatty Ox's beef brisket noodles a few times before and it is one of my favourites too.
The huge Chinatown Food Complex has some 200 food stalls, divided into 4 colour (red, green, yellow and blue) sections. Fatty Ox is in the quieter green colour section, facing the outside of the building.
As I like both beef brisket and tendon, I ask for both with my noodles. This set of egg noodles, splashed with sauce, topped with beef brisket and tendons, and dressed with greens and chopped spring onion costs a reasonable SGD4 (2016 price). I added a large dollop of sambal chili (no additional cost) and the set comes with a small bowl of soup.
The generous strips of beef brisket were braised till the meat was tender and its soft fibres soaked up the beefy juices and savoury herbal braising stock like a wet sponge. It's heavenly to beef brisket lovers.
There were 3 or 4 pieces of these thick jelly-like, spongy bands of beef tendon.
Hours of braising infused the otherwise flavourless tendons with the savouriness and subtle herbal taste of the braising stock.
The generic slender egg noodles were done soft al dente with a gentle bounce to the bite. The strands were coated with a slick oily aromatic sauce with layers of savouriness plus a bit of flavours from the juicy beef brisket and the dollop of sambal chili.
Lovely noodles.
Speaking of which, Fatty Ox's house made sambal chili was delicious too - the mild spiciness was complemented with crustacean savouriness held together with aromatic chili oil.
This clear looking medium bodied soup packs a nice savoury sweet flavour.
Stall holders Mr Cheung and wife originally from Hong Kong have been hawkers for some 20 years and at Chinatown Food Complex for the last 5 years. Mr Cheung serves several signature Cantonese dishes like soya sauce chicken and Hong Kong roasts at Fatty Ox. They still insists on preparing food fresh everyday, the old way.
3-Star Fatty Ox has one of the best beef brisket and tendon noodles in Singapore. If you are in Singapore's Chinatown, this is one of the best treats you can find by a hawker master originally from Hong Kong.
