Tonny Restaurant doesn't need any more introductions, especially among locals. I am just noting down, sharing my own latest experience, like letting you read my diary 🤭
Simply furnished and laid out two shop lot restaurant (they also have a couple of private rooms). Tonny's fans are here for the Cantonese maestro's cooking. Service is old school, staff are professional, friendly, know their dishes and regulars.
Organiser Marcus is a regular here, we just let him work out the dishes (some off menu) with Chef Tonny 🙏
First dish was 蚬芥鲮鱼球 Dace Fish Ball. My Cantonese, really cannot liao. The way I heard it (and the look of the dish), I thought we were having fried battered dace fish heads. Yeah, I was wondering what's that too 🤔
Turns out, they were fish balls. 头 tou and 球 kou can sound almost the same to undiscerning Cantonese bananas 🤭
It's mashed dace fish meat with embedded aromatics.
I loved dace fish and tried several in Shunde, Foshan. Glad Chef Tonny serves this iconic fish which is a key source of protein and flavours in the Pearl River Delta, hence it is a pillar of its renowned food culture.
香煎鹅肝 Pan Fried Slice Foie Gras.
The real stuff, just seared enough to make the ultra rich umami savoury buttery juice and flavour flow in the browned slab.
椰子炖鸡汤 Coconut Soup with Chicken.
I love the rich savoury sweet soup melding the flavours of fresh chicken, dried seafood and coconut meat. The coconut meat was softened by cooking, so it detaches from the shell easily. Nicely soft to the bite and tasty too.
竹壳蓉粉丝蒸 Bamboo Clam Steamed with Garlic and Vermicelli.
Crustacean umami and savoury flavours from sauces and garlic were on point, though the clam wasn't that meaty nor juicy tonight.
老菜蒲蒸黄脚腊 Yellowfin Seabream Cantonese Steam.
Sweetness from soft moist flesh complemented by mild savoury sauce, fried garlic and fresh aromatics. (Wah lau Tony JK, this generic description can copy and paste for all good Cantonese steam leh. But, it is what it is 🤭 No need to embellish with hyperbole lah 😬)
烧鸡 Roast Chicken. Tonny does it better. Crisp outside, the tender bird was still succulent and still had its natural sweetness 😋
蒜蓉银芽炒青龙菜 Stir Fried Garlic Beansprout with Green Dragon Vegetable. Nicely done. They plucked all the earthy roots from the bean sprouts. All the vegetables still crunchy, sweet and juicy.
沙煲黄鳝饭 Claypot Rice with Eel.
Just a mild savoury flavour over the rice. The best part for me was the gently chewy scorched rice crust.
香煎锅饼 Crispy Pancake with Red Bean Paste.
I like it that the red bean paste filling was not overly sweet.
Chef Tonny delivers again - what did we expect right? Tonny's is a good place for get togethers because we never had to worry about the quality of the food we are getting.
Eight of us, our bill came to SGD115 per pax.

Tonny is always nice … did a crocodile 🐊 paw sometimes back and it was out of this world … full of collagen 🤤🤤🤤
