I like how the chefs here rely on fresh ingredients and use them innovatively to create flavourful pork free dim sum.
新山龙的香港点心没用猪肉但有另一番风味. 香港陈师傅精心做出来的点心有自然的新鲜甜美. 全靠食材新鲜. 我觉得很好吃. 不吃猪肉的朋友, 也有美味的点心吃哦.
Xin Shan Long restaurant at La Grandeur Palm Resort Johor has a classic, old style Chinese restaurant interior. Plenty of wood on the floor, walls and ceiling as well as hardwood furniture. Full length window views of the resort's lush greenery. Bold red table cloth, red lanterns and warm orangey lighting.
Xin Shan Long's kitchen is headed by Chef Simon Lau (left of picture) with Chef Cheng in charge of the dim sum department.
Chef Cheng who has over 40 years' experience as a dim sum chef hails from Hong Kong - the capital of dim sum. Chef Cheng started in Hong Kong as a restaurant help selling dim sum at the tender age of 13. He then graduated to work in the restaurant's kitchen to learn the art of making dim sum.
Chef Cheng first came to Malaysia in 1990 to set up the pork free dim sum restaurant at the then Pan Pacific Hotel in downtown JB. He then went to work in Perth for 6 years before returning to Malaysia to head the dim sum department in Xin Shan Long.
Chef Cheng makes 25 different types of pork free dim sum at Xin Shan Long. We tasted
Deep fried yam cake with diced chicken RM6.80. We like it that the yam dumpling is fried to a light crisp outside with juicy stewed diced chicken wrapped inside a purse made with flavoursome yam paste.
Steamed prawn dumpling RM7.80.
Steamed BBQ chicken buns RM7.80.
Steamed chicken with prawn dumpling (crowned with crab roe) RM7.80.
Steamed dumpling Teochew style RM7.80.
Steamed radish cake with mushroom RM5.80.
Steamed bean curd skin rolls with oyster sauce RM6.80.
Steamed chicken feet with garlic RM5.80. I like to convert people to this dish 😁
Steamed chives dumpling RM6.80. These dumplings are loaded with chives, one of my favourite greens because the juicy stalks pack flavour and crunch. The filling contains minced chicken and then there were crunchy bits like cartilage which made these chive dumplings rather special. Chef Simon and Chef Cheng threw their heads back in laughter when we tried to find out what the crunchy bits were 😂
Deep fried prawn dumpling with mayonnaise RM7.80. We like this prawn dumpling for it's unique thick crispy and light wrap.
Steamed bun with butter milk powder and salted egg yolk RM6.80. Savoury sweet, smooth and gritty salted egg yolk custard in a fluffy light snowy white bun.
Steamed chicken roll with ginger leaf RM6.80. This was my first time eating anything with ginger leaf. It's nice! The ginger leaves impart a subtle ginger spiciness and aroma to the tender juicy savoury sweet chicken. Added gentle savouriness from the spongy mushroom and sweetness from wolfberries. This is a must order item.
Steamed green tea buns with red bean paste RM5.80. Chef Cheng gave the traditional red bean buns a Japanese twist by adding aromatic green tea to the dough.
Steamed brinjal with squid paste and garlic RM5.80.
Bamboo pith dumpling in superior stock RM12.80. Must order this. The clear broth has a delightful, refreshing light sweet savouriness.
There is a huge ball of tender chicken, mushroom and bamboo pith. Gentle sweet savouriness with subtle natural chicken sweetness in the tender meat, spongy mushroom and soft crunchiness of bamboo pith.
Pan fried radish cake RM5.80. Nicely crisped outside without the grease. Inside, it is loaded with moist, flavoursome radish mash laced with savoury dried shrimps.
Chilled mango pudding with fresh milk RM6.80. Lovely pudding that doesn't stinge on real mangoes and is light handed on sugar.

Bad taste poor service..
ReplyDeleteWent on sunday 23 mar 17, dim sum did not taste good and not so fresh. Service was very poor, every request has to be repeated at least twice or even thrice even though place was not crowded. Save your trouble and look elsewhere.
I am sad to hear that the standard is not maintained.
