I long wanted to try the 代炒, "you buy, we cook for you" restaurants at the Pontian wholesale fish market.
The idea is simple. Buy your own seafood at the Pontian wholesale fish market.
Pontian wholesale fish market is a fascinating place. Every morning starting from around 9am till around 11am, lorries and vans bring in last night's catch to the market. The seafood caught overnight in the Malacca Straits still have bright eyes and are stiff with rigor mortis 👈 click
You can buy your seafood at both the wholesale and retail sections of the Pontian fish market.
But, truth be told, unless you know your seafood and local prices well, you won't be saving much if any money at all. But, there's no reason not to have fun and enjoy the experience. Just come with a smart or local friend 😄
There are 2 "you buy, we cook for you" restaurants at the Pontian fish market - Ah Huat 亚发代炒 (left) and 来好海鲜代炒 (right). Both are good.

Update 2023: 来好海鲜代炒 didn't survive Covid 19 and only Ah Huat is still in operation.
This was the first time we were trying any of the "you buy, we cook for you" restaurants, so we randomly picked Ah Huat 亚发代炒. Shall try 来好海鲜代炒, next time.
A short while after we handed our fish and prawns to the staff, boss Ah Huat came over to our table to discuss how we would like our dishes done. Ah Huat will suggest preparation methods based on what seafood you bring to his restaurant.
Update 2023 and pro-tip: Ah Huat's business has boomed. His restaurant is usually full house during lunch. So, before you go to the fish market across the road, get a queue number from Ah Huat. Then come back with your fish after you have bought them. That saves you at least an hour 😄 I learned the hard way, so you don't have to 😅
Ah Huat has over 30 years experience in F & B business, 20 years in Singapore and KL, and 10 years here in Pontian. Ah Huat pioneered 代炒 "you buy, we cook for you" here in Pontian.
For our Ikan Kurau, Ah Huat suggested steaming. For the prawns, Ah Huat cooked it asam pedas style. He suggested hor fun for the carb dish.
Four of us, we had only a couple of dishes as we still have many places to visit for our whole day food trail.
The Teochew style steamed Ikan Kurau was tender, juicy and sweet.
The gently savoury, sweet, tangy sauce highlighted the fish's natural sweet flavours.
Asam pedas prawns.
Ah Huat's staff shelled and deveined the ang kar prawns for us 👍
The asam pedas tasted mildly sweetish tangy spicy which complemented the fresh ang kar prawns. Ah Huat put in generous amounts of fresh brinjal, onion, lady's finger, tomato in the asam pedas.
Ah Huat whipped up a good hor fun with nice savoury sweet toasty wok hei.
Information for you 👉 We had great fun with the 代炒 "you buy, we cook for you" experience. The food was tasty, and service at Ah Huat's was warm and friendly.
We paid RM28 for the Ikan Kurau (RM30 per kilo) and RM55 per kilo for the ang kar prawns. Cooking fees and hor fun at Ah Huat's was RM49. So, total cost for our meal was RM28 + RM55 + RM49 = RM132. (Note that these are 2019 prices.)
