I have been on the look out for good noodle stalls in Singapore, and so when I saw uncle Bob shared this sheng mian 生面 from Teck Kee Cooked Food 德记熟食, I couldn't wait to taste them myself. I did today, and they were really delicious.
There are some 50 food stalls at Kebun Baru Market & Food Centre and Teck Kee Cooked Food has the longest queue. Waiting time is at least 30 minutes.
Teck Kee Cooked Food has been here for over forty years.
The signboard says 德记熟食 - there is no English name.
There were four pictures on the signboard, but I looked, looked, looked, and saw only three dishes - noodle soup, noodle dry, porridge, that's all 🤷
We got the noodle soup, two bowls of it.
It's sheng mian noodles submerged in a bowl of cloudy hot soup with minced pork, pork slices, liver slices, fish balls, lettuce, a raw egg, chopped scallion and a few bak pok (lard croutons).
It's a simple, comforting dish.
Uncle Bob asked me to take this picture of the two bowls of noodles. One with the raw egg stirred into the soup. Orh.
First things first, the soup. It has a rich, full round body thickened with the raw egg beaten in.
The soup has quite robust but not overwhelming savoury sweet flavours that come in many layers. It seemed like a blend of pork, chicken and other ingredients. The raw egg added an eggy sweet taste.
It's like a tonkotsu broth, no kidding (but less salty).
The bak pok and lard gave the soup a subtle bak yu (lard oil) flavour and aroma.
The flavours and aromas blended together very smoothly.
Delicious.
The sheng mian 生面 noodles were done to a slight chewy crunch to the bite which I like. Slurpy smooth and tasted savoury sweet from the soup clinging to the thick strands.
The fish balls (factory made), minced pork, pork slices and liver added textures and more flavours to the dish but to me, the tasty soup and springy noodles win already lo.. 😋
For a bit of spicy kick, spike it with cut chili padi which the stall provides.
For noodle lovers, this simple humble dish is a must try. $3 per bowl.

Indeed very long Q and indeed very nice. The prices are now $3.50/$4/$5.
ReplyDeleteit's now 4.50 for the smallest bowl. still delicious but no longer affordable for those with small budgets.
