Bakery Brera & Fine Foods needs no introduction really. They have been wildly popular for their Instafamous cruffin which is a cross between the croissant and muffin (actually more a croissant in a muffin cup). Their must have cruffins come with innovative piped-in fillings like matcha, kaya, peanut butter, lemon curd, chocolate, nutty salted caramel, etc., with new flavours released regularly.

Fans of Bakery Brera & Fine Foods would be happy to know that they also make artisanal panettone and stollen for Christmas.

Bakery Brera's youthful Executive Chef-Baker Wythe Ng Beng Soon has some 20 years of baking experience under his belt. He has cake and pastry making in his blood as his family in Sekinchan (Malaysia) runs a traditional Chinese bakery and pastry business. Wythe was helping out in his parent's business since childhood. Wythe's first job was a baker boy at a bread maker in his hometown. He next moved to Cake Sense in Petaling Jaya (near Kuala Lumpur).

Coming to Singapore, Wythe joined Baker and Cook as pastry chef. He next joined Asanoya Bakery which afforded him opportunities to deepen his knowledge and sharpen his skills in Japan. Next stop was research and development at Commonwealth Culinary Creations. Wythe was a founding partner of Keong Saik Bakery.

Today, Wythe is Executive Chef-Baker and Head Baker at Bakery Brera & Fine Foods leading a platoon of enthusiastic bakers. Wythe and his passionate team create the many leading edge fine breads, cakes and pastries at Bakery Brera.

Take this stollen based on a recipe Wythe learned from his former German boss at Commonwealth Culinary Creations. The soft icing coated bread was buttery, not overly sweet, and nutty with nice fruity fragrance.

These cling wrapped stollen were on their way to customers' homes. I highly recommend that you get some too 😄 ($19.80 per piece, 2020 price.)

Wythe has personally developed a panettone that is selling like hot cakes. Panettone is a buttery, eggy, fruity bread that is a revered Italian Christmas tradition that has caught on around the world, including in Singapore.

Bakery Brera's panettone is made with Italian flour, French butter, French and Italian candied citrus (lemon and orange), etc.

Panettone connoisseurs will be happy to note that Bakery Brera make their panettone with mother yeast from Italy.

The panettone is light, fluffy and pulls like soft spongy tissue. It is gently buttery, eggy with fruity sweetness from the embedded candied lemon and orange peel, and soft raisins. The panettone has a fruity fragrance.
