Sing Ting is a small back street shop lot eatery which is simply furnished and clean.
The classic mee hoon kueh - pieces of hand torn, hand kneaded flat flour dough in a hot soup made by boiling anchovies and stock bones (pork). Garnished with Chinese spinach, lean pork slices, generic fish balls, fried anchovies, fried fish roll and fried shallots.
The dry version where the bowl of soup is served separately and the mee hoon kueh with its other ingredients tossed in a dark savoury salty sweet sauce.
I like the down-to-earth, homely feel of Sing Ting's mee hoon kueh. The pieces are hand torn, so they come in different shapes and sizes. They are quite thick but not even the same thickness throughout. I like their tender chewiness and slight spring to the bite.
Sing Ting's signature crispy chewy savoury fried tofu roll.
Many people are big fans of Sing Ting's signature chili dip which has layers of quite sharp spiciness from chili and raw garlic held together with sour fresh lime juice.
Sing Ting is also known for its own blend of smooth black vinegar which it bottles under its own "百岁人" label.
The chili sauce is freshly made everyday.
Sing Ting uses Chinese spinach instead of the traditional sayur manis - for mee hoon kueh, I prefer the texture and taste of sayur manis over Chinese spinach.
