肆源小炒 Best Poached & Roast Chicken in Masai, Johor Bahru ⭐⭐⭐⭐



肆源小炒 (no English name) is one of my favourite eating places in JB, one of those default places to eat when I just want a nice meal without having blogging in mind - since I have blogged about 肆源小炒 3 times already because I like the food here so much. But, I can't help it - their poached chicken, roast chicken and roast pork are so good, I just have to tell you about them. So, this will be the fourth time that I am blogging about 肆源小炒.



肆源小炒 is located just across the road from the Masai bus station. The eatery in the front porch of somebody's home is makeshift and dingy. But, it is the place where Masai folks who know where to get cheap and good food come for brunch or lunch.



肆源小炒 chef-owner Mr. Tay hails from Bukit Mertajam in Penang where he was a caterer and hawker before coming to Masai JB.



Mr. Tay is skilled in cooking for large groups and he can cook many dishes very well. Whenever we come to 肆源小炒, Mr. Tay always delights us with new dishes. He is passionate and gifted in balancing aromas and flavours, and he is constantly experimenting playing with tastes and dishes.



As usual we had a few different dishes and as always, they were all delicious. But, for this post, I want to tell you about Mr. Tay's poached chicken, roast chicken and roast pork.



The chicken and pork are just some of the dishes among many that Mr. Tay and family cook everyday. As this is not a chicken rice specialist shop, there won't be many chicken nor much roast pork - three roasted birds, two poached, and a slab of sio bak, that's all, so they sell out quite quickly.



Oh.. Mr. Tay's poached chicken meat was so tender, juicy and smooth. It tasted sweet with a subtle natural chicky taste which I like.



While most stalls fry their "roast" chicken, Mr. Tay roasts his chicken with charcoal fire. Mr. Tay's roast chicken feels and tastes just like poached chicken - tender, juicy sweet with chicky taste - but with an additional layer of toasty savouriness from the golden brown skin.



Mr. Tay's sio bak (roast pork belly) had just the right mild savouriness in layers complemented by a bit of sweetness in the fat and saltiness in the crackly golden brown skin that crumbles to the bite like stiff but brittle biscuit.



Okay... I am not a fan of the butter rice which Mr. Tay serves with his chicken. (That rice is for eating with other "economic rice" dishes.) I much prefer the traditional chicken rice that is cooked in chicken stock with chicken grease, caramelised garlic, lemongrass and pandan leaves. But, this is not a chicken rice stall.



That doesn't worry me at all as I always order Mr. Tay's hor fun when I am here. His hor fun has wok hei and nice balanced savoury sweet flavours. Equally important, Mr. Tay's hor fun is a perfect complement to his poach/ roast chicken and sio bak.

Pro Tip: Eat Mr Tay's chicken and sio bak with his hor fun 😄
