Raffles Hotel Courtyard Regional Hawker Showcase Jul to Oct 2024 • Pork Martabak & More


Went to try the trending pork martabak at Raffles Courtyard yesterday evening. 

Under the first-ever regional hawker showcase at Raffles Courtyard, four carefully curated hawker stalls from our region operate popup stalls to present their cherished specialties. 

Pak Buyung Haryanto from Bandung, Indonesia leads the grand parade with his rare but famous pork martabak. Pak Buyung's popup at Raffles Courtyard operates from 3 - 9 July 2024 (while the hawker showcase will run from Jul to Oct 2024).

Pak Buyung makes martabak with various fillings such as chicken and lamb at his Bandung stall, and is highly sought after for his unique pork martabak. Pak Buyung said his is the only pork martabak stall in Indonesia.

At Raffles Courtyard, the dough is made from scratch on-site just like back at his Bandung stall. 

The flipped and stretched dough was thickly ladled with generous porky toppings of lup cheong (Cantonese wax sausage), smoked ham, and bacon. Laced with aromatics like onion, scallion and coriander, with everything held together with eggs. 

The large folded dough envelope bulging with porky filling was oil fried and oil basted in a shallow sizzling pool of clean oil in a shallow pan till the outside was well browned and crisped. 

The huge martabak can feed 2 - 3 people easily. Truth be told, I am satiated at two cut pieces and pushing myself after that. I am not a big eater, believe me 🤭

The crisp chewy wrap was thicker than Singapore and Malaysia martabak. 

The moist meaty pork filling was quite robustly savoury salty. Aromatics and corn, etc., added complementary sweetness and aromas to the salty meaty fried bread. Though oil fried and basted, the martabak did not feel greasy or oil saturated.

The martabak came with an assortment of dips and sauces. My favourite (actually it was the crowd fav too) was the freshly made spicy sambal matah, a spicy hot sourish Balinese relish that cuts through the meaty filling, elevating our enjoyment. 

Each martabak costs S$35++ and add S$20++ to get two cocktails. So, I treated myself to the legendary Singapore Sling lo 🤭 🍸

Pak Buyung and his pork martabak stall will be here at Raffles Courtyard till 9 July.

Next hawker legend at Raffles Courtyard is Ms Ho Thi Tha who will serves banh khoai from 7 to 13 Aug 2024.


Banh khoai was one of my memorable experiences from Hue, Vietnam. Customers buy their fresh seafood like fish, prawn and squid, etc., from the market stalls. These are given to hawkers who use them to make banh khoai rice pancakes. This delectable delicacy is coming to Raffles Courtyard next month!
