Came to try the Penang style Hokkien mee from Jason Penang Cuisine stall at ABC Brickworks Market & Food Centre.
Before I go any further, Penang style Hokkien mee is soupy and totally different from Singapore style fried Hokkien mee and KL style (black) fried Hokkien mee.
I came at 11am on a Sunday morning.
Ordered just the SGD$5 serving of Penang Hokkien mee.
Taste the soup first.
It was mildly umami savoury with underlying spicy heat.
The umami came from prawn heads. Relatively mild, it's not the hyper umami prawn soup type. Penang Hokkien mee soup already has chili sauce mixed inside the stock during cooking.
Stirring in additional (optional) sambal added more spicy heat to the prawn soup.
The soup clinged to the yellow noodles lending the strands its umami spicy flavours.
Bean sprouts provided crunch and their sweet juices.
The key toppings in Penang Hokkien mee, clockwise from top left - prawn, lean pork slice, hard boiled egg, kang kong.
Two fresh shelled succulent prawns which were crunchy meaty and sweet.
Several slices of lean pork. Firm, slightly chewy but porcine sweet.
Token slivers of kang kong. Added colour but little flavour (too few). Nonetheless, Penang Hokkien mee is not complete without kang kong 🤭

Jason's Penang Cuisine also has Penang Asam Laksa and Penang style fried kway teow which I would be coming back for.
