After many trips to Thailand, I've never been to Rayong, Chanthaburi and Trat provinces. So, I was quite excited to experience this less traveled visit Thailand itinerary.

We flew from Singapore to Bangkok, fly to Trat, ferry to Koh Chang (Elephant Island), back to Trat, drive through Chanthaburi and Rayong back to Bangkok, then fly back to Singapore. Six day fly and drive holiday 😄

I followed Johnny of SZ Kitchen since his days at Gek Poh shopping centre in Jurong (about 10 years ago). SZ Kitchen serves affordable set meals and fish soup which are good value and tasty. We also like their fried chicken.
But, to us SZ Kitchen's biggest draw has always been their premium fish.

I have seen and tried several stalls with "Big Prawn Noodle 大虾面" in their name. They have a certain DNA in their taste profile and pretty presentation which I like. So, I was wondering where this variation of prawn noodle came from. I haven't tasted anything like it in Malaysia or in Xiamen, Fujian (where the dish came from).
*Of course, there are many prawn noodle places that serve big crustaceans but this "Big Prawn Noodle 大虾面" has its own unique taste profile.

If you are a prawn noodle lover (many Singaporeans are), when you are in Xiamen, Fujian, you may wish to try out the prawn noodle there. It's the OG (original) - mother of Singapore prawn noodles.
You will find a strong resemblance between the prawn noodle of Xiamen and Singapore / Malaysia. I find such overseas connections and the insights they provide on our own cuisine, most fascinating. That's one of the things I constantly look out for when travelling.

When Han said to bring us to Cai Rang Floating Market in Can Tho, my mind pictured those floating markets that I have seen before. Actually, only in Thailand - in Hatyai. Food and market stalls on boats lined up neatly at designated berths and customers walking around on the jetty.
Can Tho Cái Răng's floating market's format turned out to be a little lot different - it's an eye opener for me.

Finally came to try Soon Huat Prawn Noodle at North Bridge Road hawker centre. It's a very well loved stall serving nice old school prawn noodle with prawns, pork and fishcake.
