Vincent is here for the second time since Antoinette launched their Salted Egg Yolk Lava Croissant two days ago.
Today, he made sure that he is first in the queue.
10:50am. Owner Chef Pang emerges from the kitchen with trays of freshly baked golden brown ingots. The croissants' golden glow bounces off Chef Pang's beaming face :-D These are some of the most beautifully shaped and coloured croissants that I've seen anywhere :-D
11:00am sharp. Doors open and the first wave of salted egg yolk lava croissant enthusiasts and Instagrammers streamed in. Everything was very orderly and cheerful. Everyone was happy.
It was all smiles.
The biggest smile was from Chef Pang. Of course lah, his salted egg yolk croissants are selling like hot cakes since launch :-D
Antoinette's salted egg yolk croissant is huge and sells for SGD6.50+ for take away and SGD6.50++ for dining in.
My heart ached a little when that blade sawed into the too-beautiful-to-eat pastry. I could hear the faint crackling of the flaky layers as the blade worked its way though the heart of that croissant. I could also smell the buttery aroma as the crispy bread broke.
oooowwww..... that golden brown magma flowed like molten gold.
We stopped and watched in awe as the lava flowed to a stop. We were betting on how far will it flow :-P
The flaky buttery layers crumbled in our mouth like a light, fluffy, non greasy biscuit.
Antoinette's salted egg yolk lava flowed like thick creamy milk. Made with real salted egg yolk, it is velvety smooth with very slight soft micro graininess on the tongue. The lava tasted mildly savoury balanced with a slight sweetness. It's savoury sweetness complements the buttery savoury croissant perfectly.
Chef Pang said that three salted egg yolks went into each one of Antoinette's salted egg yolk croissants. The real salted egg yolks had to be partially hand mashed and then hand sieved to get the right texture. There is a touch of brandy in the lava but I was not able to discern it.
->> Do yourself a favour. Go get and try one of these at least once. Just beware of possible addiction.
