Curious about wild boar meat and want to give it a try? Fa Shao in Taman Ungku Tun Aminah is a convenient place in Johor Bahru for a taste of this game meat which is hard to find nowadays. Wild boars are abundant in Malaysia's forests but stalls serving the meat are more and more rare.

This little stall in Taman Ungku Tun Aminah is one of the places I go to for wild boar meat. Fa Shao Curry Boar 发嫂咖喱山豬肉 has been in business since 1996 (that's 20 years ago) and has it's regular clientele.

Fa Shao serves curry wild boar and wild boar bak kut teh.

Wild boar bak kut teh.

I like this wild boar BKT broth. It has a full body from the dissolved collagen from hours of boiling. The flavours in the broth are robust - there is a sharp but smooth pepperiness balanced by sweetness and savouriness. There are also slight Chinese herbal notes.

The wild boar meat is thoroughly cooked till tender. It is moist inside but a bit grainy. It's texture reminds me of kangaroo meat which I tried decades ago - all lean and not a shred of fat at all. There was no gamey taste as it is masked by the spicy peppery broth.

I like this part, the shank. The tender meat attached to the bone has a nice spring to the bite. The best part is the skin. It coils like a thick sheet of rubber and has a nice soft rubbery feel to the bite. This is the part of wild boar which I like most.

Fa Shao uses wild boars caught in oil palm plantations. The animals feed mainly on palm fruits so their meat is less gamey than boars living near mangroves which feed on earthworms and so their meat have a muddy taste.

发嫂 the lady boss from Segamat (Johor) who started it all in 1996.

发嫂's signature curry boar. The lean meat is thoroughly cooked in a robust curry till tender soft, the strong spices smothering and overpowering any gamey flavour there might be in the boar meat.

->> Just a humble little stall, Fa Shao is a well established place among JB locals for wild boar meat dishes. Their wild boar curry and bak kut teh are both delicious.

The other place I go to for wild boar meat is Seng Huat coffee shop in Ulu Tiram but it is available only on Sunday morning and is usually sold out before 9:00am.
