After my last trip to Taipei, I kept thinking about the wonderful beef noodles I ate there. I am planning a major eating trip back to Taipei and surrounds, so this list is part of my eating plans.
For my list, I picked only local specialities recommended by locals. My first targets are their beef noodles. (I will prepare other lists on braised pork rice, night market snacks, pepper cakes etc.)
After eating, I will write separate posts detailing my personal experience at these famous shops.
The humble beef noodles found throughout Taiwan is considered one of its culinary treasures. These are the must try beef shops around Taipei 👉
Restaurant name: 老宋記山東牛肉麵
老宋記's chunky stewed beef are tender, falling apart with gentle bites. The braised tendons are like jelly. The thick and broad noodles are springy to the bite. The broth is savoury sweet beefy sourish and not greasy. Remember to try 老宋記's spicy chili sauce made with three types of chili peppers blended together.

Restaurant name: Yong Kang Beef Noodles 永康牛肉麵
Yong Kang beef noodle is a very popular shop near Yong Kang Park and Dongman MRT station, so it is very accessible. 永康's stewed beef chunks are huge and they are spongy tender with loads of beefy juice inside. The stewed tendons are also huge and they are gummy and soft like sticky jelly. The broth is made by slow boiling stock bones for 24 hours, so it is loaded with beefy savoury sweetness. There is house made bean paste in the Sichuan style broth which gave it another layer of savouriness and flavour.

Founder 劉曾文 took his grandma's recipe to start his business - the soul of the recipe is the special broth. The heirloom recipe is not really suited for mass production - it takes 72 hours to boil the stock bone to make just 80 bowls of full bodied broth. The resulting rich creamy broth full of melted bone marrow is seasoned with a bit of salt - that's all. Everyday, customers queue hoping to get one of 80 daily bowls of limited edition savoury sweet broth which tastes like warm milk. There is very little grease in the milky broth. The slices of beef shank at 72 Beef Noodles are tender and have a nice subtle spring to the bite.

劉山東牛肉麵 serves Shandong style beef noodles in Taipei. Second generation owner 劉少麟 ran this shop for over 30 years. 劉少麟's father 劉佩芹 founded the stall when he came to Taiwan together with the Kuomintang Army in 1949. Struggling to survive, 劉佩芹 resorted to selling his hometown noodles. It turned out to be a hit as many people in Taiwan were pining for hometown flavours. The winner here is their rich broth. The beefy savoury broth is sweetened with caramelised sugar which also infuses it with a toasty flavour. The thick strips of beefy stewed shank are tender and juicy. The thick heavy noodles are another signature of Liu Shandong Beef Noodles. The thick round noodles are tender and have a springy chewy bite. 劉少麟 still makes the noodles at the shop everyday to ensure quality and consistency. 劉佩芹 now in his 90s cannot remember much but must have a bowl of Shandong beef noodles everyday as he remembers its flavours very well and won't have anything else.

Popular shop opened by couple 曾誠 and 王旋 serves their signature tender beef rib noodles in a gently savoury sweet herbal broth with rice wine undertones. When at 老兵曾王記 ask for their signature 霸王面 which comes with ribs, shank and tendon with noodle in a bowl of beefy broth. Customers like their thick, springy al dente noodles. 老兵曾王記 is also famous for their beef aspic 牛肉凍 which customers scramble for. Must also try their unique chili sauce with is made by stir frying roughly grounded dried chili in butter.

Eating in Taipei's back lanes is a memorable fun experience to take home. This famous back lane stall serves chunky tender beef in a robust spicy savoury salty Sichuan style broth. 老牌牛肉大王 uses locally raised "yellow cows" 黃牛 which are fresh, unlike imported beef which are frozen. Owner 謝錦發 is originally a noodle maker - 老牌牛肉大王's signature freshly made noodles are heavy and thick, so it is chewy and spongy to the bite. Remember to try their crunchy preserved cabbage which is savoury sweet tangy - it whets your appetite so you can eat more beef and noodles 😄

The speciality at 云客来 is their fresh knife shaved noodles. Go for their premium beef shank "heart" which is chunky, tender yet have a nice springy bounce. The full bodied broth is naturally sweet and beefy.

Founder 劉土次 nicknamed 黑人, is famous for his spicy beef noodles. Customers come for 黑人's tender stewed beef shank, full bodied spicy herbal beefy broth, and springy noodles. Each bowl of beef noodles is splashed with a ladle full of 黑人's rich stewing gravy which gives the dish its signature spicy beefy oomph. Each tender juicy chunk of beef is saturated with spicy beefiness which is released with every bite. 黑人 also have a "dry" version served without broth.

This is a crazy popular beef noodle shop in Yilan County. There is a queue everyday (many from out of town) before 龍記 restaurant opens for lunch at 11am. Founder 陳學良 travelled throughout Taiwan over over 30 years for insights to develop his own brand of beef noodle. The three treasures - beef shank, tripe and tendon are in big chunks and served in a savoury sweet slightly herbal broth. It takes 5 hours to boil beef stock bones, vegetables and herbs to make 龍記's signature broth. 龍記's broth is made fresh everyday because it is always sold out.

If you are making the obligatory trip to Shifen Old Streets for sky lanterns 天燈, make your journey "doubly worth it" by dropping by Fu Ge Beef Noodle 福哥牛肉面 in Ruifang. Fu Ge serves tender chunks of beef in a savoury beefy subtly herbal broth. The thick noodles are springy. When at Fu Ge, remember to get their signature stewed beef intestines. Must also order Fu Ge's century eggs because of their runny yolk.

Restaurant name: 老眷村川味牛肉麵 Military Village Sichuan Beef Noodles
老眷村川味牛肉麵 serves a style of beef noodles created by founder 郝淑芬 which combines Sichuan flavours with Taiwan tastes. 二兩面 Two Tael Noodles is the signature of 老眷村川味牛肉麵. The chunks of beef shank are stewed in spicy bean paste sauce, vegetables, spices and herbs till tender. It is served with springy noodles in a bowl tossed with spicy Sichuan chili sauce. In one of the soup versions, the broth is a fusion of hot Sichuan spices with beefy bone stock.

陳大方's beef noodle is enjoyed for their thick tender juicy stewed beef shank. Their savoury sweet beefy broth is made by boiling fruits, vegetables, beef bones, chicken bones, ham, and herbs for at least four hours. Their signature is their hand pull noodles (ramen or la mien) which are freshly made a la minute, so they are extra springy and tasty. 大方 also serves hand shaved noodles.

Founder 莊寶珠's 竹東莊記牛肉麵 is the most popular beef noodle shop in Hsinchu County (so be prepared to queue and possibly face the disappointment of sold out items). Customers come to 莊記 for their chunks of spicy stewed beef which are made with 牛肋條 short ribs (instead of the more common beef shank). Short ribs are more tender than shanks. 莊記's savoury sweet beefy broth is made by boiling stock bones for 16 hours at low heat... 16! The broth is served with a bit of spicy gravy so it has a layer of spiciness. 莊記 make their own noodles fresh everyday. The noodles are served at al dente doneness. Also get their preserved cabbage which are fried with chili pepper before serving so it has a blend of savoury sweet spicy sourish flavours.
