香味 Chicken Rice and Roasts stall in the Bai Nian food court in Viva Business Park in Chai Chee serves a good chicken rice. 香味 is a welcome addition to Singapore's east which though famous for good food, oddly isn't as well endowed with great chicken rice stalls as the rest of our chicken rice obsessed island.

The plate of poached chicken (white) and HK soya sauce chicken (black) was just one the dishes among the many we shared during lunch at the 百年 Bai Nian food court in Viva Business Park.

Truth be told, I was not overly excited when I saw the plate of chicken as it came half soaking in a pool of thick dark sauce and deboned. I like my chicken with little sauce and then very light ones only, and with every bone intact 😄

But, I changed my mind, sat up and paid attention, once I took a bite of 香味's chicken. Both the poached and soya sauce chicken were tender and juicy. The skin was smooth, soft and there was a thin layer of congealed jelly-like fat underneath.

In both black or white, I could still taste the natural chicky sweetness despite the mildly savoury sweet sauce. And, then for the first time, I began to appreciate the convenience and elegance of eating my chicken deboned and in dainty bite size pieces 😄

The rice was made of good quality grains which were loose, tender and subtly nutty. The rice was not overly greasy, had a nice gentle aroma and a rich savoury layer over the sweet starch. Either margarine or butter was used to create that rich savoury flavour with depth.

The chili sauce was fresh and sharp. Its sting is complemented by a sourish zest from fresh lime.

Nick is the man behind 香味 chicken rice and roasts.

Nick hails from Johor Bahru and he started work in JB as a kitchen help at age 14. He then went on to run his own zhi char stall in JB. Nick was working with a famous chicken rice stall in Singapore before opening 香味.
