Jia Xing Fish Ball is a popular Foo Chow style fish ball noodle stall in Taipei with nearly 70 years history.



The stall was founded in the 1950s by 鄭依凱 who came to Taiwan from Foo Chow to escape the Civil War in China. 鄭東雄 is the second generation owner. Jia Xing Fish Ball 佳興魚丸 serves the traditional Foo Chow style of fish ball packed with minced pork and broth inside (like a Shanghai xiao long bao).

Jia Xing Fish Ball's fans like their fish balls because the outer fish meat layer have a springy tenderness. The smooth tender outer layer has a subtle fresh fish sweetness. Inside the fish ball, it is packed with minced pork and loaded with savoury sweet broth.

Jia Xing's fish balls are made with a blend of fresh shark meat with sweet potato flour. When blending the shark meat and sweet potato flour, 鄭東雄 determines the right texture by feel, with his seasoned hands.

The minced pork filling is made with black pig ham (hind leg) marinated with soy sauce etc. The fish balls are hand made, packing the minced pork into the fish balls. The fish balls are then cooked by boiling in water. The water used to cook the fish balls is boiled again together with shark fish bone to make a savoury sweet soup.

鄭東雄 also serves their signature blanched shark skin dressed with savoury sauce and aromatic shallot oil as a side dish.

The fish balls and side dishes are traditionally eaten with mung bean noodles or glass noodles in a bowl of savoury sweet broth.
