Shilin Night Market has a popular chicken chop stall famous for its super juicy "urinating" chops - not a very appetising name but it highlights the signature juiciness of this chicken chop.
The aromatic crispy batter outside is thin, the meaty slab of chicken is thick, and savoury sweet juices oozes out with every bite like squeezing a wet sponge - no, like "urinating".
The thick slab of chicken breast is marinated with a gooey sauce made with 10 types of spices and herbs. The sticky marinate is massaged by hand into the tender chicken flesh - the staff taking care to strip off any membrane that may prevent the full absorption of marinate. The marinated chicken slabs are rested in a chiller for 24 hours.
The batter is made with a blend of 3 types of flour for greater crispness and powdered spices for aroma.
The flour mix is gently hand pounded into the chicken slab - embedding it in the meat, not merely coating it on the surface. The idea is to not let the juicy meat and crispy batter separate when the chicken chop is served to customers.
The battered chicken slabs are allowed to rest for 20 minutes before frying.
