The stall was founded in Taichung in 1992 by 王慶隆. As Taichung was already saturated with fried chicken chop stalls, founder Mr 王慶隆 decided to go north to Taipei to try his luck.
王慶隆 struck gold in Shilin Night Market with his signature "bigger than your face 大過你張臉" crispy juicy fried chicken chops.
Customers responded enthusiastically to the oversized chops and the rest is chicken chop history. The constant queue at the iconic blue coloured stall and big chicken chops in blue paper sleeves are now seen in a dozen countries around the world.
What is it about Shilin Hotstar fried chicken chop that makes it so irresistible?
To make 豪大大雞扒, fresh chicken 溫身雞 breast is butterflied and spread eagle flat. The big thin slab is infused with a savoury sweet marinade, then coated with dry flour. It is fried in 180℃ high heat precisely for 4.5 minutes till golden brown. Customers can choose original savoury sweet flavour or spicy (where the chicken chop is dusted with chili and spice powder).
