The top chicken rice stall at Yuhua Place with long time fans who love their very tender, juicy birds and flavourful aromatic dressing sauce.

I have been stalking YuHua Place Market & Hawker Centre for the past few weeks looking for the best food stalls here. Going by the queue, Xing Yun is the most popular chicken rice stall here. During peak hours, Xing Yun sports a queue that would even make Tian Tian Chicken Rice proud.
To Xing Yun's loyal fans, and there are many, this is the best chicken rice in the west, if not the whole of Singapore.
The chicken came cool (dunked in cold water), deboned on a large shallow plate with a pool of brown sauce at the bottom.
The chicken was juicy, smooth and very soft, nearly too soft for me. It had little natural chicky flavour but was sweet overlaid with savouriness from the sauce.
I looked for the layer of congealed fat between the skin and meat which I
feel would be sexy tasty for poached chicken but there was none. (Yeah..., I know
many people see no fat as a good sign.)
The brown sauce savoury sweet aromatic (soy sauce plus sesame oil and something sweet) provided most of the flavour for the dish.
The rice had just the right moistness and doneness - tender and nutty, the way I like it. Not too greasy nor wet, so the rice do not clump together. Flavour was a little too subtle except for slight sweetness from the rice.
Xing Yun's chili sauce is a pretty sharp spicy blend of chili, ginger and garlic with a bit of zest probably from lime. I like it.
Their ginger sauce is okay too, though a little watery. They have a thick gooey dark
sauce which is sweet-savoury, the old school kind. I like that too for its
nostalgic feel and taste.
The watery mildly savoury-salty soup was a little flat tasting.
